I’ve used most of the resources already mentioned: Taste of Home’s Light & Tasty and Cooking Light are definitely more geared toward tasting good. Weight Watchers seems geared more toward consistently "diet" cooking, with less emphasis on flavor. I absolutely despise diet cheese!
If you want to go for "healthy" cooking, try making sure you use fresh, natural ingredients in your meals – getting rid of all the chemicals can make all the difference in the world in how food affects you. Also, cooking old favorites that you consider "bad" but serving them in appropriate portions can be a great boost to healthy eating!
I have a weight watchers cookbook, but I jmostly modify recipes from Joy of Cooking or Fannie Farmer by substituting olive oil, broiling, baking, or grilling instead of frying, and using lower fat ingredients. I also eliminate most salt…people who can eat salt can add salt at the table to their own taste!
