I’m trying to bake hamburger buns. It’s my third time and my past two attempts can’t be called success.
I’ve tried looking everywhere and think I have the right recipe, but the buns I made are hard and heavy. I tried my Doug to rise two time and and then shape it and let it rise once again. Then I put it in pre-heated oven and when I get them out of the oven I find rock hard buns. I tried adding vinegar into my recipe (as one recipe says, it will give your really airy buns), but no gain.
I’ve almost given up, but just wanted to check if you guys have any idea why it’s happening. I wanted to get hamburger buns like the ones MacDonald’s have.Oh my..
Here is recipe I used ..
White bun recipe
from the Lutheran Church Basement Women Cookbook.
It has a bit of vinegar in it, which makes
them very light and airy, indeed…
Light & Airy Buns
I make mine larger, so only get about 3 dozen.
Nutrition is calculated on 50.
1 cup lukewarm water
2 pkg. Yeast (4 1/2 tsp)
2 tsp sugar
1 cup flour
1/2 cup shortening or oil
1/2 cup sugar
1 Tbs salt
3 1/2 cup warm water
2 Tbs vinegar
7-9 cup flour
Combine water, yeast sugar and the 1 cup of
flour and let rise a bit.
Add oil, sugar, salt remaining water, vinegar
and flour.
Mix all together.
Knead real good and let rise twice (will be
a little sticky).
Pinch off dough about the size of a crabapple.
Form and place on greased cookie sheets.
Let rise and bake at 400� for about 15-20 minutes

You could be experiencing a handful of problems with this. One of the most common mistakes I see bakers make is that they use too much flour. I’ve included a link to my baking blog below, and it takes you to my tried and true rolls recipe. It has never failed me, and in fact, won first place at my county fair last year.
I also have a photo tutorial on it, and a couple of videos. One will show you how to properly measure flour (most people do this wrong, resulting in rock hard bread), and the other how to properly shape the rolls.

Try a different recipe. I’ve used this for loaf bread and also for hamburger/hot dog buns and had great results – the milk is what makes a tender crust.

I also made buns from a potato bread recipe. The potatoes have no taste, but they make a very tender bread.
Hamburger Buns

"Delicious hamburger buns! Homemade and fresh! Easy to make and economical, these buns will make your dinner guests feel extra special."
Ingredients:
2 cups warm milk (110 degrees F/45
degrees C)
1/4 cup margarine, melted
1/4 cup warm water
1/4 cup white sugar
2 (.25 ounce) packages instant yeast
2 teaspoons salt
6 cups all-purpose flour, or as needed
Directions:
1. In a large bowl, stir together the milk, margarine, warm water, sugar and yeast. Let stand for about 5 minutes.
2. Mix in the salt, and gradually stir in the flour until you have a soft dough. Divide into 25 pieces, and form into balls. Place on baking sheets so they are 2 to 3 inches apart. Let rise for 20 minutes.
3. Preheat the oven to 375 degrees F (190 degrees C). Bake the rolls for 15 minutes in the preheated oven. Cool slightly, then split them in half horizontally to fill with your favorite burgers.
