This is a cooked frosting with, margarine and granulated sugar and it has to be beaten with a mixer for quite a while to make it fluffy. I used to make it and it was sensational. I would be grateful if any of you have this particular recipe.

    Italian Buttercream

    Ingredients
    1 1/4 cups sugar
    1/3 cup water
    5 ounces egg whites, chilled
    1 lb butter, chilled and cubed

    Method
    Heat sugar and water to 240 degrees F

    Whip egg whites in the bowl of an electric mixer until they just reach the stiff peak stage. Turn the mixer off, add the sugar and immediately turn the machine on high and whip until cool. Add the butter, 2 tablespoons at a time, waiting until the butter is incorporated before adding the next.

    Buttercream can be flavored as you like with any extract, liquor or liqueur

    8 oz. cream cheese
    1/2 stick butter
    1 tsp. vanilla
    1 lb. powdered sugar
    Whole pecans (optional)
    Beat cream cheese, butter, and vanilla until smooth. Gradually add powdered sugar and beat until creamy smooth. Place whole pecans around sides and on top for decoration.

    I find all those recipes at http://www.food.com now!! I have a collection of about 2,000 cookbooks but looking online is easier than going through all those recipes.
