My friend Chola shared one with me that is very easy and I have made it already twice this week and I even cooked it down a little more and used it as a pizza sauce it is so good! Do you have any that you like that well? My husband fell in love with it!

    Makes 4 servings:
    Ingredients

    * 1 (16 ounce) can whole tomatoes
    * 5 cloves garlic, peeled
    * 3 tablespoons olive oil
    * 1 white onion, chopped
    * 1 pound mushrooms, sliced
    * 1 (16 ounce) can crushed tomatoes
    * 8 ounces tomato paste
    * 1 green bell pepper, chopped
    * 2 tablespoons dried oregano
    * 1 tablespoon dried basil leaves

    Directions

    1. In a blender chop the whole tomatoes with juice and garlic until chunky. In a medium size pot, heat oil on medium high heat. Put onion and mushroom in and saute for about 5 minutes.
    2. Place in pot the blended tomatoes, crushed tomatoes, tomato paste, chopped green peppers, oregano and basil. Bring to boil, then lower to medium low, cover and stir periodically. Cook and reduce about 1 to 2 hours or to your liking.

    Ahhhhhhhhh I made pizza 2! LOL!
    Let me share a simple one…no sauce really but delicious…
    Roast a chicken, stuff with 1 lemon put holes in lemon with a fork..add fresh basil in cavity and add some greens from celery in the cavity as well…under skin, add black pepper…more basil…some butter. Roast chicken, when it is about 15 min before done. Boil water for angel hair pasta….and in a small fry pan…add 4 tbls of virgin olive oil…when you are cooking the pasta…heat oil, add chopped garlic to oil and salt. Cook in oil till garlic is golden not brown…pour this oil sauce over your pasta…now add a bit of the lemon juice from bottom of roaster to it…toss…serve with the chicken, salad and great bread. This is a dish my grandmother use to make..I never had hers…but this is just 1 of my favs and sooooooo easy…also if you want, you can make that pasta and toss in shrimp that also is delicious…add some parm to pasta in both dishes for a kick. Also U can add some fresh parsley for color after pasta and oil sauce is added and toss. This dish goes with so many things. Hope U enjoy. U know as a italian I was cooking for 30 people by the age of 16!!! OMG….My uncles could eat..LOL…Oh I miss those days Teresa…wish I was there to cook with ya!
    Let me add a quick dessert…not home made…but really good….take a pound cake…slice it in halves…so U have 2 layers…on the bottom layer add fresh whipped cream…I like to make my own, sweeten to taste…after U put a layer on bottom, now add some frozen strawberry’s that are thawed….not the juice. Now put top layer on…and repeat…serve very cold…great with spumoni…or vanilla ice cream on the side, a nice dish and not a heavy dessert.

    Fat chance my mom would let me have any Italian Sauce unless she spills it on the floor and I get to it before she can get her Swiffer wet mop out! She can be speedy when she has too!
