There is a recipe in my Italian cook book that calls for it, and I would like to make it, but I don’t know what it is. I can’t find it on the internet and no one in my family knows. Help?

    It’s a cold smoked semi hard cheese. You can substitute smoked gouda if you can’t find it online.
