Yes, saute it in chopped garlic and a few tbs. of olive oil. Maybe a few onions and red and green bells and then when it is golden and cooked thoroughly add the vodka sauce.
anyways, if i were u i would make either grilled chicken breast w/ lemon juice, salt and pepper, and maybe some honey. but if u want to make a breaded chicken, u can do it easily like this:
preheat oven to 350 get a package of boneless, skinless chicken breast wash and de-fat rub chicken w/ lemon juice and salt and pepper dip chicken on all sides into bowl of flour dip chicken on all sides into bowl of whisked eggs dip chicken on all sides into bowl of italian breadcrumbs (u can get from supermarket) brown in pan w/ olive oil arrange onto foil lined sheet, drizzle w/ olive oil, and bake for 20 minutes turn over chicken, drizzle w/ lemon juice, salt and pepper, olive oil if needed bake for another 10 minutes or until done
Marinate in Italian dressing ( I like Newman’s Own with garlic ) overnight, then cook on the grill……Serve with fresh homemade garlic bread. Mmmm – What time is dinner?!?!
I love cooking Italian it’s my favorite!! I haven’t tried your dish but I think grilled is always a great choice. just a little salt and pepper you want to taste the sauce not cover it up. and if it’s too cold to grill you could bake it that would be ok. slice the chicken and serve it on top of the pasta.

Bnls Sknls chicken breast – 3 pieces
sear ea side in a frying pan til golden brown then finish in a 400 degree oven for about 12 minutes

I usually cut it into strips, coat it with flour, then saute’ it in garlic and oil. Really quick and delicious!!!
