My husband is bosnian and I am Italian. And I would like to learn new recipes to cook for him and surprise him. We can’t have any pork.

Maybe bosnian food? You could look for recipes for "pita", there are many different. For example burek, zeljanica, sirnica.. Or "sarmice", "punjene paprike", that’s some that I know.

Punjene paprike (Stuffed bell peppers)
Ingredients (for 3 persons):
500g of minced beef meat
7 medium sized (about 700g) bell peppers
100g rice (ratio of meat to rice should be 5:1)
1 medium size onion (about 70g)
2 cloves of garlic
2 table spoons of universal food seasoning (or 1 spoon of seasoning and 1 tea spoon of salt)
½ tea spoon of black pepper
1 spoon of chopped parsley
1 spoon of sweet red paprika
Ingredients for sauce:
½ dl of oil
1½ spoons of flour
1 branch of celery
½ l – 1 l of passata tomato sauce (depending on preference and consistency of tomato sauce)
Finely chop garlic, onion and parsley but not too much – there should be small pieces, not a paste. Wash the rice well.
Mix meat, rice, garlic, onion, parsley, seasoning and most of red paprika (save a little bit for the sauce).
Some people also add 1 egg in filling probably as a binding agent, I’ve never tried that.
Hollow out the peppers by removing stems and seed.

Stuff the peppers with preppared mixture but don’t press it too much.

Pour the oil in a pot, add flour and fry this very little until flour starts to turn yellow.
Add the rest of sweet paprika and passata sauce.
Put stuffed peppers in this, add water and cook for about 45 min.

This goes well with potato puree.

This minced-meat-and-rice thing is very common in Bosnian cousine probably as a result of middle-eastern influence. There are various meals with vegetables stuffed with meat and rice.
Stuffed zucchini:

actually these in the picture were stuffed with rice alone – a vegetarian variation
Stuffed tomato:

since tomato is soft this meal is rather baked than cooked; meat and rice are fried on onion and garlic, tomatoes are stuffed with it and baked in oven for about half an hour on 180°C
Stuffed onion (sounds strange but it’s actually very delicious, the dish is called sogan-dolma):

Meat and rice can be also wrapped in various leaves for example cabbage (dish is called sarma):

collards or grape wine leaves (dish is called japrak):
