He’s Italian and loves the food… however I don’t know how to make anything (except to boil pasta) I’m not the best cook in the world but I can follow instructions.

He’s finishing up his 7th year of college and has one of his last classes tonight, so while he was gone I wanted to make him a nice surprise dinner… hopefully you guys can give me some suggestions and don’t forget the recipes! (remember – cooking novice here)

He loves Italian, Greek… pretty much anything new as well. Thanks in advance for the suggestions!

    Well I can suggest lasagna. Its real easy to make. Takes a little but believe me, he would love it. If you go to the grocery store, get a package of Ronzoni NO boil lasagna noodles, follow the instructions on the back. If you decide to make it and you need help email me, I will be glad to help.     Mexican Lasagna

    1 pound lean ground beef
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    2 1/2 cups salsa
    1 11oz. can whole kernel corn, drained
    1 teaspoon chili powder
    1 teaspoon ground cumin
    12 6inch corn tortillas, divided
    1 16oz. container cottage cheese
    1 cup shredded sharp cheddar cheese
    1 2.25oz. can small pitted ripe olives, drained

    Preheat oven to 375 degrees F. Brown meat in large skillet on medium heat; drain. Return meat to skillet. Add onions and peppers; cook until crisp-tender, stirring occasionally. Add salsa, corn and seasonings; mix well.

    Layer on third of the meat mixture and one half each of the tortillas and cottage cheese in a 13×9 baking dish. Repeat layers; cover with remaining meat mixture. Sprinkle with cheddar cheese and olives.

    Bake 30 minutes or until heated through.

    I would do chicken parm. so follow the directions from toastette and then don’t put the cheese on it instead pour some of your fav. jarred spagetti sauce on it and then top with some mozz. cheese and parm. cheese and bake in the oven at 350 till cheese is melted. I also serve it with spagetti so make your spagetti and top with the same jarred sauce after you warm it up. Serve with a salad and hot Italian bread

    For dessert do choc. dipped strawberries, they are in season right know and are so great. Buy choc. chips and melt in the microwave for 15 seconds and stir till melted then dip strawberries in and put on a piece of wax paper and put in frig to harden

    Here is a recipe that is simple but elegant and is sure to impress….serve with pasta tossed in olive oil and Parmesan cheese.

    Chicken Picatta

    Ingredients:
    4 skinless chicken breasts, pounded flat (An easy way: place chicken between two wax paper sheets and pound with a meat cleaver or a heavy pan until 1/4 inch thick)
    Flour to coat
    1 T olive oil
    1/4 cup drinking sherry or dry white wine
    1 small onion, minced
    Juice of 1 lemon, no seeds!
    1/2 cup chicken broth
    2 tablespoons butter
    1/4 cup Italian parsley
    3 T capers
    Salt and Pepper

    Preparation
    Coat the chicken in flour and shake off excess.

    Heat the olive oil in sauté pan over medium high heat.

    Sauté the chicken about two minutes on each side, just until it is browned on the outside.

    Add the wine or sherry to deglaze the pan, and scrape the browned bits off the bottom of the pan and it will be an integral part of the chicken picatta.

    Add garlic and onions. Sauté for approximately three minutes.

    Add the lemon juice, pepper, butter, chicken broth and capers, and sauté for approximately two minutes.

    Add the chicken back in and sauté until the chicken is done, about five minutes.

    Try making lasanga, it will take some time but he will love it.
    Things You’ll Need: 1/3 – 1/4 c. extra-virgin olive oil, pepper, salt , garlic powder, 1 (16-oz.) box lasagna noodles, 8 oz. shredded mozzarella cheese, 8 oz. grated Parmesan cheese, 8 to 12 oz. ricotta cheese and 1 pound of ground beef, 1 can (12-16 oz.) tomato sauce, Half a package of French’s Spagetti sauce, 1 can (28 oz.) Tomatoes.
    Step One – Cook meat in a saucepan with the olive oil, salt, pepper and garlic powder until brown.
    Step Two – Add Tomatoes, tomatoe paste and Spagetti sauce mix. Cover and let shimmer for 20 to 30 minutes.
    Step 3 – Boil water and cook the noodles until they are almost tender and drain. Make sure to stir so noodles don’t stick together.
    Step 4 – In a large pan (one that is safe to use in the oven), layer some of the meat on the bottom, then some noodles and then a layer of cheese. Repeat with another layer of meat, noodles, cheese. End with a layer of meat on top, sprinkle Parmesan cheese on top. Bake at 300 degrees for 1 hour or until done. Don’t let it burn.

    For Greek salad, try this recipe. If you and your boyfriend don’t like feta cheese then leave it out. But if you both like it then cut it into smaller chunks.

    3 vine ripe tomatoes, cut into chunks
    1 red onion, thinly sliced
    1/2 European seedless cucumber, cut into bite-size chunks
    1 small red bell pepper, seeded and chunked
    1 small green bell pepper, seeded and chunked
    1 cubanelle pepper, seeded and chunked
    1 cup Kalamata black olives
    Several sprigs fresh flat-leaf parsley, about 1/2 cup
    2 (1/4 pound) slices imported Greek feta
    1/4 cup (a couple of glugs) extra-virgin olive oil
    3 tablespoons (3 splashes) red wine vinegar
    1 teaspoon dried oregano, crushed in palm of your hand
    Coarse salt and black pepper

    Combine vegetables, olives, and parsley in a large bowl. Rest sliced feta on the top of salad. Combine oil, vinegar, and oregano in a small plastic container with a lid. Shake vigorously to combine oil and vinegar and pour over salad and cheese. Season with salt and pepper and let the salad marinate until ready to serve.

    Plus get a premade loaf of garlic bread. You will just need to warm it up in the oven for no longer then 5 minutes or so. The salad with serve 4 people, the lasanga will make 2 nights worth of dinners if you and your boyfriend have a big helping each night.
