So I am going to be cooking dinner for the first time for my boyfriends VERY italian family. I would love to "wow" them with my culinary expertise… which I actually have non of! I am looking for a recipe for maybe ravioli (from scratch) and a GOOD sauce recipe as well (not just a jar with a few of my own spices added) Is anyone willing to share an old family secret or at least something that others like? As the the ravioli, I have cheese, and had some thoughts of using spinach, but thats not necessary. Anyway, thanks!!!

    i highly suggest you visiting Foodnetwork.com and checking out Giada’s recipes..She is from Rome and prepares traditional italian meals all the time. Please know some are a little difficult and pricey to make, but they are ALL yummy..At least the ones I’ve tried. I recommend her stuffed shells recipe..but she does have homemade ravioli recipes as well. Have fun.. Merry Christmas!!… :)

    Making homemade ravioli is for advanced cooks, don’t set yourself up for disappointment. Giada’s recipes are fantastic and on a level which you will be more comfortable. I know you want to impress, but don’t bite off more than you can chew the first time out of the gate. Great luck to you!

    My newest family secret for good sauce (gravy,sorry some italian families call it that, my family does) is cooking in a crock pot. I brown the meat (sweet sausage, piece of beef and pork) with a few cloves of garlic in a pan on the stove then transfer it to a crock pot add tomatoes and let it cook all day in the crock pot on low.

    I’d suggest you not try to wow them w/ your culinary prowess on ITALIAN food since they are very Italian, and you say you are not that great of a cook. Master something else, like meatloaf, mashed potatoes, and green beans. If it’s a very familiar dish to them, they will do nothing but compare it to grandma’s or Aunt Maria’s or whatever.
