I know where you are comming from!Just remember that olive oil is one of the good fats, so its great to use in moderation!A meal I cook alot is some whole grain pasta along with veggies I cook in a skillet. The veggies I cook are usually onions (especialy red onions), cherry or plum tomatos, zucchini, asparagus, garlic, mushrooms, artichoke or whatever I have on hand and I cook these in just a tiny bit of olive oil in the skillet. Once the veggies and pasta are cooked, drain the pasta and toss it with the veggies, some olive oil, herbs and low fat italian cheese. Its sooo delicious and filling. Add a side salad with some fat free italian dressing (wishbone is the best!).I also make veggie quesadillas, which are pretty self explanitory, but you dont need much oil and cook the tortillas (preferably whole grain) in the oven insted of the stove top. This reduces the fat by not needing oils.Pretty much, its just about making the right choices. Insted of a cannoli, have some fruit. When it comes to dairy, just pick the lower fat version. Breads and pastas, go whole grain (they are healthier and contain more fiber which keeps you feeling full). limit your meats, and add in more beans insted.For lunch I love to have some minestrone and salad!
