I get paid Monday and I want to cook for my fiance. I know I can take her out, but I want to make her something, and not just chicken or something that is an average day dinner.

I have about 0 to spend on ingredients, and I’m looking in the area of Italian food. Can anyone provide recipes for me?

    These should do the trick. I stole it out of my great grandmothers.

    Italian Wedding Soup

    Ingredients
    1 pkg of frozen chopped spinach
    2 cloves of fine chopped garlic
    1quart of chicken broth
    3 tablespoons of olive oil
    1-8oz glass of water
    2 eggs scrambled
    1 pkg of tortellini macaroni
    Grated parmesan cheese

    Preparation
    In a large pot add garlic and oil. Saute till it takes on a little color. Over medium heat add defrosted spinach, chicken broth water & tortellini. Cook till tender. Then add scrambled eggs and grated parmesan cheese.

    Tortellini Antipasto Salad

    Ingredients
    1/2 box reg. tortellini
    1/2 box spinach tortellini
    1 large jar marinated artichoke hearts in oil
    1/2 lb. fontanella cheese, cubed
    1/2 lb. cheddar cheese, cubed
    1/2 lb. salami, cubed
    1 pint black cured olives
    1 pint green olives
    1/2 pint sliced marinated mushrooms
    1/2 pint thinly sliced marinated peppers

    Preparation
    Cook tortellini in boiling water that has been sprinkled with garlic powder and salt to taste. When cooked, drain and cool. Combine all ingredients in a large bowl including the oil from the artichokes and toss. Refrigerate until served.

    Alfredo Sauce

    Ingredients
    1/4 cup and 2 tablespoons butter
    2 egg yolk
    2 cups heavy whipping cream
    Salt to taste
    2 pinches ground nutmeg
    1/2 cup grated Parmesan cheese
    1/2 cup grated Romano cheese

    Preparation
    Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, grated Parmesan cheese, and grated Romano cheese. Stir constantly until melted, then mix in egg yolk. Simmer over medium low heat for 3 to 5 minutes. Garnish with additional grated Parmesan cheese, if desired. Makes 4 servings.

    Fried Calamari

    Ingredients
    1 pound of Calamari
    1 cup flour

    Preparation
    Cut the head and tentacles off all of the calamari. Once the head is removed clean out the inside making sure to remove the quill. Scrape or peel the skin off the squid until you reach the white flesh. Cut into rings and rinse under the water. Once you have everything cleaned you will need either a frying pan or a deep fryer to cook the calamari. Take each piece of calamari and dip it in the flour. Make sure to cover entirely in flour. Shake off the excess and place it into the heated oil. Cook until golden brown.

    Lasagna Florentine alla Lucia

    Ingredients
    9 uncooked lasagna noodles
    3 cups milk
    1/4 cup flour
    1 teaspoon garlic salt or more to taste
    2 tablespoons butter
    1 tablespoon Italian Seasoning or more to taste
    2 (9-10 oz.) package frozen spinach, thawed and squeezed to drain
    1 pound ricotta
    2 cups shredded mozzarella
    1/4 – 1/3 cup grated Parmesan or Romano cheese

    Preparation
    Cook lasagna noodles to desired doneness. Drain and rinse with water. Heat oven to 350F.
    In a bowl combine milk, butter, flour and spices, blend well. Cook over medium heat until mixture boils and thickens. (I find it easier to use a double boiler to make the sauce.) Reserve 3/4 cup for top layer of lasagna. Stir spinach into the remaining sauce.

    In a bowl, combine ricotta and mozzarella. Spread 1/2 cup of spinach sauce in the bottom of a 13X9 inch (3 quart) baking dish. Top with 3 lasagna noodles, half of the cheese mixture and half of the remaining spinach sauce, repeat layers. Top with the last 3 noodles and reserved 3/4 cup of sauce. Sprinkle with Parmesan or Romano cheese.

    Bake at 350F for 30-40 minutes. Let stand 5-10 minutes for easier serving. Serves 4-6.

    Appetiser : Water Cress soup
    Main course:
    Asparagus ( You always find these in the most expensive restaurants served with the main meal, which would be some kind of meat and perhaps small red gourmet potatoes)
    So, have asparagus, you could have maybe a poached fish with mango salsa, for the meat part, or salmon, and then to complete the meal serve either whipped sweet potatoes or whipped mashed potatoes topped with a few shavings of fresh green onions and about a teaspoon of hasbrown for garnish, this looks very nice.

    For desert, go for something healthy and appealing
    such as a tofu mouse topped with berries

    First Course: Tortellini Soup — 4 servings
    1-1/2 teaspoons olive oil
    1/2 small red onion, chopped
    1/2 zucchini, chopped
    1-1/2 teaspoons minced garlic
    1 (14 ounce) can crushed tomatoes
    1 (14.5 ounce) can chicken broth
    1-1/2 teaspoons white sugar
    1-1/2 teaspoons Italian seasoning
    2 tablespoons red wine
    1/2 dash hot pepper sauce
    1 (6 ounce) can white corn, undrained
    1/4 cup freshly grated Parmesan cheese
    1/4 pound cheese tortellini

    In a large pot over medium heat, cook onion, zucchini and garlic in oil three minutes, until onion is translucent. Stir in crushed tomatoes, broth, sugar, Italian seasoning, wine and pepper sauce and bring to a boil.

    Reduce heat and stir in corn and Parmesan. Simmer 30 minutes.

    Stir in tortellini and simmer 10 minutes more, until pasta is tender.

    Second Course: Shrimp Lemon Pepper Linguini — 2 servings
    8 ounces linguini
    1 tablespoon olive oil
    6 cloves garlic, minced
    ½ cup chicken broth
    ¼ cup dry white wine
    1 lemon, juiced
    ½ teaspoon lemon zest
    salt to taste
    2 teaspoons freshly ground black pepper
    1 pound frozen shrimp
    ¼ cup butter
    3 tablespoons fresh parsley, chopped
    1 tablespoon fresh basil, chopped

    Bring large pot of water to boil. Add linguini, cook 9 – 13 minutes.

    Meanwhile, heat oil in large skillet over medium heat. Sautee garlic one minute. Mix in chicken broth, wine, lemon juice, zest, salt and pepper. Add frozen shrimp, butter, parsley and basil and let simmer.

    When pasta is done, drain well and add to sauce. Toss to coat, let simmer for 2 more minutes.

    WITH

    Italian Leafy Green Salad
    1 bag prepared romaine salad
    12 cherry tomatoes, halved
    ¼ cup olive oil
    2 tablespoons fresh basil, chopped
    ¼ cup balsamic vinegar
    2 tablespoons lemon juice
    salt and pepper

    Whisk together oil, vinegar, lemon juice and seasonings. Place salad and tomatoes in large bowl, pour dressing over and toss well. Serve immediately.

    Dessert: Tart Lemon Pie
    3/8 cup butter
    1/4 cup confectioners’ sugar
    1 cup all-purpose flour

    3 eggs
    1 cup white sugar
    1 tablespoon grated lemon zest
    1/4 cup lemon juice
    3 tablespoons all-purpose flour

    2 tablespoons confectioners’ sugar for dusting

    Preheat oven to 350 degrees F (175 degrees C).

    Process butter, 1/4 cup confectioners’ sugar and 1 cup flour in food processor 10 seconds, or blend with pastry blender. Pat dough evenly into 9 inch round pie plate.

    Bake 12 to 15 minutes, until golden.

    Combine eggs, white sugar, lemon zest, lemon juice and 3 tablespoons flour and mix until smooth; pour mixture over hot crust.

    Bake 15 to 20 minutes more, until firm. Let cool completely in baking dish. Cut into 12 pieces.

    Sprinkle each serving with a dusting of powdered sugar, garnish them with whipped cream, a strawberry fan and a sprig of mint.

    For a delicious Italian dinner why not make homemade lasagna, a fresh Mediterranean salad and hot garlic bread? You can start the meal with a small antipasto of cubed prosciutto , mortadella,hard salami provolone mozzerella,olives and marinated veggies like artichokes or red peppers, mushrooms availabe in jars usually in pickle & olive aisle sometimes in vegatablle aisle with mushrooms, also fresh sliced tomatoes and cucumbers drizzled with a little olive oil and granished with fresh basil if available if not use dried, arranged gracefuly on a nice platter.For dessert get fresh strawberries, rinse well in cold water drain, and dip them in a good melted chocolate let set up on wax paper refrigerate on a pretty platter or you can get some Spumoni for dessert served in little dishes or desset glasses A good Italian red wine like chianti or red table wine chilled would complete this dinner. allrecipes.com has some wonderful lasagna ideas got to the website and type in lasagna you will be amazed and get lots of great recipes & ideas .. cooks.com has good ones also Here is a good salad recipe ~1 head of lettuce torn into bite size pieces, or a mixture of salad greens 2 tomatoes cut in strips 1 cucumber peeled cut in half & sliced 1/2 cup black or green olives halved, 1/4 to 1/2 cup Feta cheese crumbled … Dressing ~ 1/2 cup olive oil ,1/4 cup red wine vinegar 1/2 to 1 teaspoon oregano 1/2 teaspoon garlic powder salt and fresh ground pepper to taste whisk together pour over chilled salad and toss for the bread simply slice loaf in half lengthwise,, slather with real mayonnaise then mix some fresh finely minced garlic and olive oil together drizzle over bread put halves together, wrap in foil and bake on baking sheet 375. 20 minutes take out remove foil ( at this time you may also sprinkle with parmesan cheese if you like)and let halves brown watch carefully …Mangia!!
