I have recipes I want to use with Italian sausage, where it is cut up and mixed in with peppers and veggies and everything, but when I looked up how to cook Italian sausage it said to keep it in the skin the whole time I was cooking it. Does this mean I cook it all the way through before cutting it up to put in the dish, or can I just cut it up and cook it similarly to ground beef? Thanks

    You can cook it in many different ways:

    1) In a pot with water just enough to cover your sausage and let the water consume completely until sausage starts to brown in its own fat. (With the case on)
    2) Same as above but with beer instead of water.
    3)You can cook it just like groud beef
    4) You can grill it just like you would grill any other sausage.
    5) Make sure you cook it through as Italian sausage is NOT pre-cooked.

    Personally, I would cook it and cut it up prior to adding it into the dish but that’s just a personal thing. I dont add a lot of seasoning to the sausage b/c italian sausage is already very well seasoned. Unless you want to season the dish you are mixing it with.

    Don’t worry, italian sausage is "very easy going" so it will turn out well any way you decide to make it.

    I cook mine before I cut it. Usually the recipe allows for it to be sliced after that and then added back for more cooking, which I also usually do.
    If you cut it before you cook it, it won’t hold together.

    All sausage is pre-cooked so its no harm to cut it up before you used it to cook. The recipe said to keep the skin because some people get the idea that the sausage skin can’t be eaten.

    How to Cook Italian Sausage

    There’s always the grill. Hot hardwood coals…

    But when cooking inside the house, here is the proper way too cook your Italian sausage.

    Preheat Oven to 350.
    Place sausage in a baking pan.
    For each pound of meat add 1/2 cup of water.
    Cover with aluminum foil and bake for 40 minutes.
    To brown the sausage, uncover and cook for 7 minutes.
    Flip Sausage and cook 7 minutes more.

    Now put the suasage in your favorite sauce. It really helps the flavor of your sauce to let the meat simmer a bit.

    Italian Sausages with Peppers and Onions

    No tailgate is complete without some sort of sausage, whether it be a bratwurst, a Polish, or an Italian sausage.

    The key to great sausage is pre-cooking, no matter what kind you are making. Without pre-cooking, you may burn your sausages in an effort to cook them through. Follow these simple steps for great Italian Sausage, both sweet and hot!!

    Time Required: 1 hour

    Skill Required: Minimal cooking skills needed

    Ingredients:

    * Italian Sausage, either sweet or hot
    * For either, you need garlic, salt, and pepper
    * For hot, you will also need cayenne pepper and Tabasco Sauce
    * On the day of the game, you need butter, garlic, salt, and pepper, plus one green pepper, one red pepper, and one onion for every 12 sausages, plus a can of pizza sauce

    Steps:

    * Boil a pot of enough water to cover your sausage. If cooking both sweet and hot, you need two pots since you will cook them separately.
    * Add salt, pepper, and garlic. Add a beer or two if you want as well.
    * If using hot sausage, add Tabasco Sauce and Cayenne Pepper.
    * When the water is boiling, add your sausage.
    * Boil until cooked through. This should take less than ten minutes. If you aren’t sure if its done, cut a slice into one of the sausages and check.
    * Cut your peppers and onions into slices about 1.5 inches long, and bring them, plus the butter and your sausage, to the tailgate. Also bring a small pan, or an aluminum foil pan, to cook the peppers in.
    * Once at the tailgate, add the peppers and onions, plus salt, pepper, garlic, and butter, to the pan. Put the pan on the grill, and stir occasionally to prevent burning.
    * Remove the paper from the pizza sauce and put the can on the grill. Stir occasionally so it heats evenly.
    * Grill your sausages until they are crisp on the outside; don’t overcook them, remember they are already cooked through.
    * Serve on a sub roll with peppers, onions, and pizza sauce!
