I have a cooking practical in April. We need to start thinking about a dish we can serve buffet style. I don’t need side dishes with a main course. I suggested some type of spaghetti with bread and that would be good. I like italian food but I am open to all suggestions. I want to learn how to cook a recipe I don’t know how to make. I can make homemade pizza, spaghetti, brownies, cookies, stuff like that. I am also open to a main side dish, main course, or desserts. Thank you

"Catalina Chicken from the thighs and legs – separate them and skin them before baking to keep the fat down, if you prefer. The recipe I use is typically for a whole chicken, so I would substitute 4 – 5 legs and thighs in this case.
Take the cleaned pieces and put them in a rectangular glass baking dish. Mix one small or 1/2 large bottle of Catalina Island French salad dressing with one envelope of Lipton’s French Onion Soup Mix. At this stage, depending on your preference, you could add to the pan of chicken any of the following: Onions, 1 inch dice, red/green/yellow bell pepper, 1 inch dice, and/or pineapple tidbits. Pour the sauce mix over the whole thing and swirl it around to coat all the pieces. Cover with foil to keep moist.
Bake in a 375 degree oven until the chicken juices run clear. You will want to make a batch of fluffy rice or mashed potatoes to soak up the delicious sauce from the chicken bake. My family loves this recipe and it takes less than 5 minutes to prep."

Makes about 36
1/2 cup butter or margarine
1 1/2 cups graham cracker crumbs
1 14-oz. can sweetened condensed milk
1 cup butterscotch flavored chips
1 cup semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped pecans
Preheat oven to 350°, (325° for glass dish). Line a 13×9-inch baking pan with a sheet of foil, making sure to cover the sites well. Place the butter in the baking pan and melt it in the oven. Sprinkle crumbs over butter; pour condensed milk evenly on top of crumbs. Top with remaining ingredients in order listed; press down firmly with fork. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars. Store covered at room temperature. Can be frozen.

Baked Ziti
1 pound dry ziti pasta
1 onion, chopped
1 pound lean ground beef
2 (26 ounce) jars spaghetti sauce
6 ounces provolone cheese, sliced
1 1/2 cups sour cream
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese
Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
Preheat the oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
Bake for 30 minutes in the preheated oven, or until cheeses are melted. serves 10

Pizza Casserole:
Box of pasta or macaroni
1lb of italian sausage
1/4 C chopped onion
1/4 C Chopped celery
1 Can of mushroom soup
2C mozzarella cheese
1 Jar of Spaghetti sauce
Cook your sausage and add the onions and celery and soup.
Pour the spaghetti sauce on the bottom of your casserole dish. Put the cooked pasta on top of that. Put the meat mixture on top of that. Put cheese on top of that.
Bake for 30 min at 350 degrees

Spread the pieces of bread with frosting and sprinkle the sugar on the bread until the bread with frosting s.parkles. Then put some sprinkles on top and put the cherry on top

You could do a toastada bar.
Tostada shells-fry up raw tortillas-they can be found at a lot of store now, they look doughy, they are not regular tortillas.
Pulled pork, chicken, and beef.
Beans
Salsa
Guac
Sourcream
Shredded lettuce
tomatoes
onions
cheese
olives etc…
To make it more home made make your own beans, salsa, and guac. And mix up your own seasonng to simmer/slow roast with the beef and pork before you shred it. Roast the chicken using your own seasoning blend as well.

here is a dessert I am certain no one will expect, or duplicate. and, it is soooo good.
Apple Cake
4 cups diced apples
2 cups sugar
1 cup raisins
2 tsp salt, divided
=================
1 cup oil
2 eggs, beaten
1 cup walnuts
=================
2 cups flour
2 ½ cups apple juice
2 t baking soda
2 t cinnamon
•Mix apples, sugar, raisins, 1 tsp salt. Let stand 1 hour
•Add oil, eggs and walnuts.
•Sift in flour, juice, baking soda, cinnamon and 1 tsp salt.
•Pour into greased 13” x 9” baking dish, 350 degrees for 1 hr and 15 minutes.
•Let cool 15 minutes before serving.

Taco Lasagna Make this in 3 pans or make a couple large pans.

Taco Lasagna Ingredients
3 lb Ground beef I use extra lean
3 can (15 oz) Black beans rinsed and drained
1 1/2 cup Green pepper chopped
3 can (14.5 oz) Mexican diced tomatoes undrained
1 1/2 cup Onion chopped
18 wh Flour tortillas (8 INCHES)
2 1/2 cup Water
3 can (16 oz) Refried beans
3 pkg Taco bell seasoning mix
9 cups Shredded mexican cheese low fat if desired
In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered for 2 minutes.
Stir in the black beans and tomatoes. Simmer, uncovered, for 10 minutes. Place two tortillas in a greased 13-in. x 9-in. x 2-in. baking dish. Spread with half of the refried beans and beef mixture; sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and bake at 350 deg. for 25-30 minutes or until heated through and cheese is melted. YIELD: 25 servings.
