I Love You Shortcakes
TOPPING:
2 cups fresh or frozen peeled, sliced peaches, thawed
2 cups fresh or frozen raspberries or other berries, thawed
2 to 3 tablespoons granulated sugar
1 tablespoon lemon juice
Vanilla low-fat yogurt (optional)
SHORTCAKES:
1 1/2 cups all-purpose flour
1 cup Quaker® Oats (quick or old fashioned, uncooked)
3 tablespoons granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt (optional)
8 tablespoons margarine or butter, chilled
2/3 cup milk
For Topping, combine all ingredients except yogurt in medium bowl; mix gently. Let stand 1 hour.
Heat oven to 425°F. Lightly grease cookie sheets.
For Shortcakes, in a large bowl, combine flour, oats, sugar, baking powder and salt. Cut in margarine with two knives until mixture resembles coarse crumbs.
Add milk; stir with fork just until dry ingredients are moistened. (Do not overmix).
Turn dough out onto lightly floured surface; knead gently 6 to 8 times. Roll or pat dough 1/2-inch thick; cut with 2 1/2-inch heart-shaped or round biscuit cutter. Gather dough scraps together (do not knead); reroll and cut until all dough is used.
Place on prepared cookie sheets.
Bake 12 to 14 minutes or until light golden brown. Remove to wire rack; cool.
To serve, split each shortcake in half; top with fruit mixture and, if desired, yogurt.

Traditionally a spiral ham and scalloped potatoes with baby vegetables are often made- a leg of lamb also is quite common. But for italian, you could try chicken parmesan or chicken marsala……

~ Chicken Parmesan ~
Needed:
Chicken Breasts
Bread Crumbs (you can buy them already seasoned)
Oil
Spaghetti Sauce
Spaghetti Noodles
Milk
Eggs
Flour
Cheese (Mozzarella or Parmasean)
Put each chicken breast between to pieces of plastic wrap and pound them out to a uniform thickness, no more than about 1/3-inch.
In a large bowl, whisk together the 1 1/2 teaspoons bread crumbs
Place the flour in a large plate or bowl. In another medium bowl, whisk the egg(s) and milk together. Dredge a chicken breast in the flour and shake off excess. Then dip it into the egg mixture and finally dredge in the seasoned breadcrumb mixture. Shake off any excess breading and transfer to a baking sheet. Repeat with the remaining chicken.
Preheat the oven to 400 degrees F.
In a large straight-sided skillet, pour the vegetable oil to a depth of 1/2-inch. Heat the oil over medium heat until it registers 400 degrees F on a deep-frying thermometer. (The oil must be heated to 400 degrees F so that the breaded chicken, when added, will drop the temperature of the oil to the proper frying temperature of 375 degrees F.)
Fry 1 breast at a time until golden brown on each side, about 6 minutes total. Using tongs, transfer to a paper towel-lined baking sheet and season with salt, to taste.
Lightly brush a baking dish, large enough to place the chicken in a single layer, with cooking spray. Put Spaghetti sauce ontop of the chickens and add the cheese, allow to sit in oven until cheese is melted and SLIGHTLY browned.
Place on top of cooked Spaghetti noodles, serve extra sauce in a bowl to allow everyone to get there own for the noodles.
