i mean very simple recipes like adding lemon and oil and salt on shredded carrots, any other secrets where you add simple condiments on cooked or non cooked veggies or even fruits where the taste is salty and sour? like for example italians eat melon and uncooked ham…wierd but real good. any other food secrets?

yes, the italians eat raw dried pork, called in italian ‘prociuto crudo’. i live here in italy for almost 4 years, trust me, italians eat this stuff, you rarely find this in a supermarket in the states.

Easy, really good and healthful, too:
- As many Salmon fillets as people to dinner
- Same amount of garlic cloves
- Fresh basil
- Olive Oil (about 1/2 tsp per salmon fillet)
- Lemon juice (1 tsp per salmon fillet)
- Coarse sea salt
- Pepper
Preheat oven to 425 F.
Poke the salmon fillets lightly with a fork, to make small holes in them (just a few, no exaggeration). Crush garlic cloves and mix with lemon juice and olive oil. Coarsely chop some basil and add to the mix: stir well. Brush mix on salmon fillets, pressing it lightly into the holes.
Lightly grease an oven pan and place fillets on it (no overlap). Bake for about 15 minutes per inch of thickness of the salmon.
I like to serve this with some very light mashed potatoes, or better, with some even lighter mashed cauliflower (same recipe as for regular mashed potatoes, except you steam the cauliflower until soft but still firm). It’s also great with baked tomatoes: just split them in half, and salt them. Put in the oven some 10 minutes before the fish, and take out at the same time.

Slice some zuchinni and mushrooms, put them in a pan with olive oil, salt, pepper and oregano. Saute them until tender. Add lemon juice, and maybe a little more oregano to taste. Simmer a minute or two, you don’t want the veggies mushy.
Serve hot.
BTW, the ham that the Italians eat with melon is cured not "uncooked". Nobody eats uncooked pork, it is dangerous, you can get trichonosis (a worm).
The ham is cured in salt to kill the parasite. It is like what Americans call "country ham". It is delicious with melon in the summer, sliced paper thin. We serve it that way here in France too.

Two of my favorites would be:
1. Olive oil, lemon juice, lemon zest, tomatoes. You could add Basil if you like. You can use either sliced Roma tomatoes or cherry/grape tomatoes cut in half. This way, it is like a tomato salad. Or, if you dice the Roma’s, add the basil and a little garlic, and use it on toasted bread, it’s a quick bruschetta. Roma’s or cherry/grape tomatoes are KEY to having a sweet/sour flavor.
2. Boil some angel hair pasta, add some lemon juice, lemon zest, olive oil, salt and pepper, and use this as a base for a general pasta salad, or eat by itself. You could add parmesan cheese and black olives for a good vegetarian pasta salad, or add chicken with the parmesan and black olives for a wonderful summer pasta salad. The possibilities are endless.

Lemon, olive oil, salt & pepper, garlic, basil, and oregano are all good tossed with anything-beans(kidney type or fresh raw or blanched green beans), squash, diced tomatoes, mushrooms, cooked pasta.
If you want to get heat the oven, brush some fresh crusty bread slices with olive oil, garlic, and herbs and toast with some mozerlla cheese on top. Bruscetta, its great.
I’m Italian, so olive oil and garlic makes anything good. Serve with bread and a glass of red wine and you are good to go.
However, the prociutto and melon, I will take a pass. Never tried it, but don’t want to.

Put a touch of olive oil, white wine, crushed garlic, and lemon juice in a skillet. When it gets hot, add scallops and cook until they are done. You don’t need much of the oil, wine, and lemon juice, just enough to cook the scallops in. It’s very light and wonderful.
