I love steamed broccoli but it has 3 times the carbs as regular broccoli and I wondered why.
Please, no stupid low-carb diet comments. I just want to know why cooked has more.

    Let’s say you take 8 ounces of fresh broccoli that has 2 carbs in it. Now you cook it and it shrinks due to water loss to 6 ounces. It still has 2 carbs in it. But per ounce it now has more carbs.

    Even though evaporation is partially to blame it doesn’t reduce to 1/2 to account for the doubling in carbs.
    Raw broccoli takes a long time to convert to glucose in your body, when you cook it converts to glucose faster . Taste a raw stalk then taste it cooked, its sweeter. But that should not stop you ,not only is it low in calories but full of nutrients and fiber.
