I have been living a low carb lifestyle for almost 6 months now. I am down about 60 pounds and I feel amazing. However, I am beginning to get bored with food, so I am on the hunt for new recipes. I have found a lot that call for maybe 1/2 cup or less of panko bread crumbs. Is it possible to substitute that for something a little less carb friendly? Can I completely omit it? Any and all low carb suggestions are appreciated!! Thanks so much!
I found recipes for cheesy cauliflower pancakes, zucchini cakes, baked asparagus..I know it is only being used to ‘hold’ the recipe together, I am just wondering if there is something out there that does the same thing.

There really isn’t a substitute for panko. Panko is pretty much a totally unique product. However, depending on the recipe, you may be able to use crushed up corn (or even bran) flakes, and achieve something vaguely similar, but certainly not nearly the same.

Try pork rinds — the ones that are in the aisle with the potato chips. They have no carbs and make a nice crunchy snack. You can also put them in a baggie, and use a rolling pin or just your hands, and smash them up — keep smashing and you’ll eventually get the consistency of bread crumbs.
My brother is on a low carb diet and has lost over 50 pounds! He mixes those crumbs with parmesan cheese, coats chicken pieces with that, and bakes them. They come out nice and crspy. That was the one thing he missed on this diet — something crunchy. Good luck!

Congratulations on the weight loss! It’s a little hard to make suggestions when I don’t know what your making. But, I would try substituting the panko with either oats, or instant rice.

Panko really is a unique and wonderful product. And congrats on the weight loss. Since your aim is LOW carb, not NO carb, a little Panko every now and then is something you should allow yourself…just not too frequently.

I like to chop coconut to finer bits and roll stuff in it! Much easier on the carb counts than any sort of bread or cracker crumbs.
Also you can finely chop any kind of nuts to blend with the coconut and be even better! Or use all nuts and do away with the carb count on the crust entirely?
