I’d like to hear your favorite simple and delicious ground beef recipes. Preferably low carb. I’m running out of ideas what to cook and tired of the same old stuff!

    meatloaf. not exactly low-carb, since you will need to add a filler like cornflakes or breadcrumbs. but, one dish that will net you sandwiches for the rest of the week, everyone likes meatloaf (comfort food) and freezes great. add about 1 cup bread crumbs, 1/3 cup katsup, 1 large egg, salt & pepper to taste, 1 tbsp dried herb of your choice (oregano, basil, italian seasonings, whatever you like best) and a dash of worchestershire sauce. mix about 1/3 katsup & 2 tbsp worchestershire & spread on top of loaf & bake at 350f for 1.5 – 2 hours, or until internal temperature reaches 160f.

    try fried soup

    Fry cut potatoes, onions and a lb round of burger and any other fresh vegetable in a huge pot until the burger is done. Add two large cans of diced tomatoes, the tomato cans filled with water again, and a can of beef broth.

    Simmer about 15 min with the lid on

    add one each with the processing liquid:

    Green beans
    Peas
    Carrots
    Corn

    Simmer another 15 min after adding salt and fresh ground pepper to taste. Makes a weeks worth

    How about a Mushroom Swill Burger over a Green Salad??
    I had all kinds of ideas, but going low carb limited me. But, this is different.

    Your 2 lbs burger, shape into 4 patties, salt and pepper
    12 oz box of sliced mushrooms
    4 slices swiss cheese (or 8, if you are like me!!)
    Serve with a salad (ranch, blue cheese or other carb friendly dressing, avocado, red onions and I like a combination of spring mix and romaine!)

    Directions: Broil, grill or pan fry your burger (I use a Foreman grill) When burgers are almost done, saute mushrooms in olive oil over medium or medium high heat. Place a slice of swiss cheese over each patty and give it a second to melt a little. Plate the patty and cover it in the mushrooms. It should be nice and oowy gooey. Serve the burger warm over your salad. YUM.

    Here are a couple for you
    This delicious recipe involves ground beef, zucchini, tomato, garlic and olive oil. Mix it all together and enjoy something low carb, healthy, and tasty! You can serve this with any salad or veggie side, but we took the photo with just the main dish.

    Ingredients:
    1 lb ground beef
    1 small to medium zucchini diced to 1/2" to 3/4" cubes
    1/2 cup mushrooms (diced as above)
    1 plum tomato (diced as above)
    1/4 cup water
    1/2 cup tomato sauce
    4 cloves garlic finely chopped
    1-2 T olive oil

    grated parmesan or romano cheese
    shredded cheddar / mozzarella / "pizza cheese"

    Get everything cut. Heat a large frying pan, sauce pan, or Wok on high heat. Start browning the ground beef. Once you have a nice sear on most of the meat, add in the zucchini, mushrooms and garlic. Sprinkle in a small amount of black pepper and salt. Mix and continue to cook for a couple minutes.

    Add the water and plum tomato, then cover. Turn the heat down and simmer for about 5 minutes. Add the tomato sauce and olive oil. Mix it all up and continue to simmer for 5-10 minutes to reduce and thicken the mix. Optionally, you can add a bit of carb-free thickener to get a saucier result. This latter is preferred if you intend to serve this over a low-carb pasta.

    Turn off the burner and let it settle for five more minutes to thicken a bit more. Easiest to serve in bowls, but plates work as well. Sprinkle your favorite grated and/or shredded cheeses over the top.

    Servings: 2
    Carbs per serving: 6g

    Kheema-Spiced Ground Beef
    Ingredients:
    4 tbsp vegetable oil
    2 bay leaves
    1 piece cinnamon stick – (3 long)
    1 1/2 cup finely-chopped onion
    1 tbsp grated ginger
    5 garlic cloves, minced
    1 tbsp ground coriander seed
    1 tbsp ground cumin seed
    1 tsp ground turmeric
    1 tbsp tomato paste
    2 lb ground beef
    1/4 tsp ground nutmeg
    1/4 tsp ground mace
    1 tsp salt, or to taste
    1/4 tsp cayenne – (to 1/2), or to taste

    Instructions:
    In a large frying pan, heat the oil over high heat. Add the bay leaves and
    cinnamon. Cook for a few moments until the bay leaf darkens.

    Add the onion, ginger and garlic. Cook over medium heat until the onion
    turns dark brown.

    Add the coriander, cumin and turmeric. Cook for two minutes. Add the
    tomato paste and mix it into the onions.

    Add the beef and cook, breaking it up until browned. Add 1/2 cup water,
    the nutmeg, mace, salt and cayenne.

    Turn the heat to low. Cover and simmer for an hour, stirring frequently
    and adding more water to prevent the mixture from sticking.

    Alternatively, you can cook the dish in the oven at 300 degrees for an
    hour, checking occasionally to make sure that the water has not evaporated.

    This recipe yields 6 servings.

    Total Carbohydrates: 23.32 grams
    Total Carbohydrates minus Fiber: 17.005 grams
    Carbohydrates per Serving: 3.9 grams
    Carbohydrates per Serving minus Fiber: 2.84 grams

    Comments: This is great with stir-fried cabbage, grilled zucchini or green
    beans. I like it too, with chopped tomato, avocado and cilantro on top.
    The kheema is dry — by that I mean that it is not thick and bound with a
    sauce like chili. You can use lamb in place of the beef.

    Servings: 6

    Ground Beef Soup

    Recipe By: MaryBeth
    Categories: Soups

    1 pound ground beef
    1 cup diced onion
    1 diced green bell pepper
    8 cups beef stock
    2 cups diced carrots — I used 1 cup
    1 cup diced celery
    2 cups chopped tomatoes
    1 package broccoli, frozen — cut into florets
    or 1 head cut into florets with stalks
    peeled and diced
    1/4 cup minced fresh parsley
    1 teaspoon dried thyme
    1 teaspoon dried oregano
    freshly ground black pepper to taste

    In large non-stick skillet, sauté ground beef over medium heat. Add onions, garlic and bell pepper and continue sautéing until meat is tender and vegetables have softened, about 5 minutes. Drain fat from pan and set meat mixture aside.

    In large soup pot or Dutch oven, heat beef stock over medium-high heat until boiling. Add carrots and celery and cook until almost tender, about 5 minutes. Add tomatoes, broccoli, parsley, seasonings and reserved meat mixture. Mix well. Simmer over low heat 10 minutes until all vegetables are tender. Taste and adjust seasonings.

    Description:
    Ingredients: 1.5lbs lean ground beef
    1 cup diced onion
    1 can (4oz) sliced mushrooms; drained
    1lb bag frozen broccoli flowerettes; thawed
    1/2 bottle ragu alfredo sauce
    salt, pepper and garlic powder to taste
    extra parmesan cheese for the top
    How To Prepare: Brown ground beef with onions. Drain if needed. Add salt, pepper and gralic powder to taste then add the mushrooms and broccoli. Cover and let steam for about 5 minutes over medium heat, stiring occasionally.
    Raise heat to high, pour on alfredo sauce* and let simmer 2-3 minutes to heat through.
    Top with a sprinkle of parmesan cheese and enjoy!
    *Note: use as much alfredo as you like. I find 1/2 a jar is enough, but it you want it more soupy, add the whole thing!

    Emily’s Famous Sloppy Joes

    1 1/2 pounds ground beef
    1 onion, chopped
    1 red bell pepper, chopped
    1 (6 ounce) can tomato paste
    1 cup water
    3 cloves garlic, minced
    1 tablespoon chili powder
    1 teaspoon paprika
    1 teaspoon ground cumin
    1 teaspoon distilled white vinegar
    3 tablespoons brown sugar
    1 teaspoon dried oregano
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper
    8 hamburger buns, split **or use low carb roll up bread or a leaf of romaine lettuce for even less carbs!**
    DIRECTIONS
    In a large skillet over medium-high heat, saute the ground beef for 5 minutes. Add the onion and red bell pepper; saute for 5 more minutes, or until onion is tender. Drain the fat.
    Mix in tomato paste and water, stirring until paste is dissolved. Stir in garlic, chili powder, paprika, cumin, vinegar, brown sugar, oregano, salt and pepper. Continue to heat for 5 to 10 minutes, or until mixture is thick and stewy.

    GROUND BEEF ENCHILADAS

    1 1/2 lb. ground beef
    3 tbsp. oil
    Pinch of cumin
    12 corn tortillas
    1/4 c. ripe olives, chopped
    1 1/2 c. grated Cheddar cheese
    3/4 c. onion, chopped
    3 c. enchilada sauce
    2 tsp. salt
    Oil for frying

    Saute’ meat and onions until meat is crumbly and onions are limp. Add 1 1/2 cups enchilada sauce, cumin, salt and simmer 30 minutes. Meanwhile, soft fry tortillas in oil and drain on paper towels. Dip each tortilla in remaining heated enchilada sauce, coating both sides. Add ripe olives to cooked meat and divide mixture among the tortillas. Roll and place overlapped side down in baking dish. Spoon remaining sauce over. Bake at 375 degrees for 20 minutes. Sprinkle with grated cheese.
    Can substitute cooked chicken for ground beef.

    ENCHILADA SAUCE:

    1/4 c. onion, chopped
    1 clove garlic, minced
    2 tbsp. oil
    2 cans chicken broth
    1 tbsp. chili powder
    1/4 c. flour
    1 tsp. salt
    1 tbsp. oil
    1 (10 oz.) can red chili sauce

    Saute onions and garlic in oil. When tender, add to boiling broth. Mix all other ingredients with chili sauce to make a heavy paste. Reduce with some of the broth to pouring consistency, to avoid lumping, and gradually stir into hot broth. Stir 5 minutes, let simmer 10 minutes. Makes 1 quart.

    GROUND BEEF STEW

    1 1/2 lbs. ground lean beef
    1 can sliced carrots (or fresh cooked)
    1 can sliced potatoes (or fresh cooked)
    1 pkg. brown Serv-A-Gravy
    1 dash Worcestershire sauce
    1 dash hot sauce
    Onion salt
    Garlic salt
    Oregano (a pinch)
    Marjoram (a pinch)
    Sweet basil (a pinch)
    Sprinkle of pepper

    In heavy large pot oiled with Puritan oil, brown the ground beef (stir frequently). When fully brown stir in the carrots, potatoes and add the gravy made from the directions on the box. Add the sauces, the salts, then a pinch of oregano, marjoram, pepper and basil. Stir all together and simmer slowly with lid on the pot.
    If more gravy is needed, just add water that has cornstarch dissolved in it (about a tablespoon of cornstarch) until there is enough gravy for a stew-like consistency. (Usually no more than a 1/2 cup to a cup is needed.)

    After simmering about 15-20 minutes and stirring occasionally, serve on bread. Also serve a green vegetable with the stew or a salad for a complete meal.

    STIR FRIED GROUND BEEF AND VEGETABLES

    1 lb. ground beef
    1 tsp. cornstarch
    1 clove garlic, minced
    1/2 tsp. paprika
    2 tbsp. soy sauce
    2 tbsp. oil
    8 oz. mushrooms, sliced
    2 tsp. cornstarch
    2 tbsp. soy sauce
    1 pepper, cut into 1 inch pieces
    2 stalks celery, sliced
    3 carrots, sliced thin
    3 scallions, sliced
    1/2 tsp. salt
    1 c. chicken broth or water
    1/8 tsp. pepper

    Mix ground beef with cornstarch, garlic, soy sauce and paprika. Allow to stand 15 minutes. Meanwhile, prepare vegetables. Over medium heat, allow skillet to become very hot. Add oil. Place into skillet, pepper, celery, mushrooms, carrots, scallions, and salt.
    Stir and turn for 3 minutes or until cooked but crisp. Remove from skillet and set aside. Put beef mixture into skillet and stir fry for 3 minutes until cooked. Add vegetables. Mix cornstarch, broth, soy sauce, and pepper and add to skillet. Cook until thickened, about 2 minutes. Serves 4.

    GROUND BEEF AND MASHED POTATO
    CASSEROLE

    Irish potatoes according to your family
    1 to 1 1/2 lbs. ground beef
    1 pkg. dry onion soup mix
    1 egg

    Cook potatoes and mash and season as usual. Mix ground beef, onion, soup mix and egg. Pat meat mix out on wax paper. Place potatoes on top and roll up like a jelly roll. Place in loaf pan. Bake 350 degrees for 30 minutes.

    HOT GROUND BEEF TACOS

    2 lb. ground round
    3 tbsp. sweet butter
    3 c. onion, chopped
    2 c. green pepper, chopped
    3 cloves garlic, minced
    2 1/2 tbsp. chili powder
    2 tsp. cumin seed
    1/2 tsp. salt
    1/4 tsp. freshly ground black pepper
    1 tsp. paprika
    1 bay leaf, crumbled
    2 cans tomatoes
    1 can tomato paste
    1 can condensed beef broth, undiluted
    2 beef bouillon cubes
    4 pkgs. frozen tortillas
    Vegetable oil
    2 cans pimentos, drained, chopped
    12 oz. Cheddar cheese, grated

    In large Dutch oven, saute ground round, breaking into small pieces with fork as it browns. Using slotted spoon, transfer meat to a bowl. Discard fat. Melt butter in same Dutch oven, saute onion, green pepper, garlic over medium heat, stirring occasionally until onion turns golden. Stir in chili powder, cumin, salt, pepper, paprika and bay leaf. Cook gently, stirring about 5 minutes. Add browned meat, tomatoes, tomato paste, beef broth, bouillon cubes. Stir, breaking up tomatoes with a wooden spoon. Bring to boiling, reduce heat, simmer, uncovered, stirring occasionally 1/2 hour.
    Meanwhile, thaw tortillas as package directs. Pour 1/2 inch vegetable oil into a skillet, heat tortillas as package directs for tacos. To serve; heat chili mixture to boiling. Stir in pimentos. Place about 1/4 cup chili over lettuce. Sprinkle with 1 tablespoon grated cheese. Serve at once with Hot Green Sauce.

    Stuffed Sweet Peppers
    Cook the peppers in this recipe before they are stuffed to shorten the baking time. Ground beef, onion, tomatoes, and spices are combined for the filling.Ingredients:

    • 5 green sweet peppers
    • 1 1/2 lbs. ground beef
    • 1/2 small onion, chopped
    • 1 can (14 1/2-oz.) stewed tomatoes
    • 2 Tbs. sugar
    • 1/2 tsp. ground cloves
    • 1/2 tsp. ground allspice

    Method:
    Cut tops off of peppers and clean out insides. Cook 4 of the peppers in boiling water just until soft; drain and set aside. Chop remaining pepper. Brown ground beef with onion and chopped pepper; drain off fat. Add the un-drained tomatoes, sugar, cloves and allspice and mix together. Place the 4 peppers standing up in deep casserole dish. Fill peppers with meat mixture and heat in 350 degree oven for 20 minutes. Serve over hot rice.
