I’m not a big dinner person to start with and the thought of cooking fish or any meat and veg just seems too elaborate a fare for the night. Any tips on low-carb lightweight foods, fruits or snacks I can have for dinner?

Fish/lean meats and veggies are perfect for dinner.. what’s so complex with making something as simple as those two foods?

a veggie plate maybe with like steamed veggies and some lemon juice on them, or even tuna in a can [in water], and some lowcarb whole wheat bread…anything really!

Blanched snow peas (or you favourite veggie) and peameal bacon
or
lean cuisines under 200 calories (like the peppersteak and veg)
or
(what I had today)
One slice of toast (I use the small weight watcher ones when I’m looking for low carbs)
topped with a thin spread of garlic humus, sandwich meat (optional), thinnly sliced aged cheddar cheese, one egg cook any way (I do mine in the microwave for 71 seconds with some skim milk, pepper and red onion) and thick slices of tomato (add some green onion if you didn’t use any in the egg)
