I am going to try and clone a Burger King whopper burger. I have the mayo sauce and the rest already done. The meat BK use however is very light coloured before it’s cooked, BK say they only use 100% beef, the meat is almost cream coloured before it’s cooked though and they get this nice barbecue/smokey flavour, any idea how they do this and what kind of meat they use?

I am not sure how the labeling laws work in the UK or the USA (I am in Canada). But I am pretty sure the big companies probably know how to get around the labeling laws. They say the "meat used" in their burger patties is 100% beef but what about anything else used to make the patty. For instance, if they used a mixture of pork and beef, then they are not using meat that is 100% beef. But if they use meat that is 100% beef combined with fillers, flavours and spices, etc. they are still using 100% beef (the meat portion of the burger). I am sure most people are aware beef which has been aged properly is seldom the red colour you see at the supermarkets (they use food colouring). So to get back to your question, they probably use 100% beef and combine it with other ingredients so it will take some experimenting to come up with a clone.

It’s all beef( fat).
I bet it’s at least 40% fat.
That’s why it’s white or cream colored.

The meat is deep frozen for storage and shipping and this process turns things white.
You know how water is clear, until you freeze it and the ice is white?
All the moisture in the meat is frozen solid and turns white, so the light color is from the freezing process.
Of course there is fat in the meat – there is fat in the hamburger you grill at home…ever check the percentage? It’s more than you think! Lean ground beef is icky!!

It will have more fat in it. I buy cheap mince from the supermarket for my dogs and its much lighter in colour than the better quality meat.

It may be 100% beef but it will be cheap cuts and the meat used are cast cows and young bulls they do not have great taste in it and its cheap!! It will be bulked up with other products so the meat stretches further!! What do you expect its a fast food chain!!
Just use lean beef from your local butcher and add seasoning and spice before cooking.
