I like to fry them or put them in soup but whats a way to cook them by themselves as a by themself dinner item without having to use oil or butter?

You can fry them without butter or oil. Just put them in the pan on medium heat and let them warm up a bit, then keep pushing them around so they don’t stick, as you do in stir-frying. If they look like they might stick, you can add a very tiny amount of water but be very sparing with it or they get soggy. Their own moisture might start to appear in the pan, might not, but they will cook and they might brown a little. It’s actually a very tasty way to prepare mushrooms. They get smaller as their liquid evaporates, so the flavour gets concentrated.

You could try this method I cook my veggies to cook your mushrooms: by taking a baking dish or pan & spray cooking spray, such as Pam or Market Pantry brands. They contain no fat nor calories per 1/4 seconds. Next, cut them or place them whole on the greased dish, season them with salt, pepper, oil of your choice & bake @ 425 degrees for about 35-40 minutes. You could also use other herbs of your choice, such as thyme, lemon, onion/garlic seasoning. You could also add vinegar.
I love potatoes, onions, carrots, egg plants, tofu, & sweet potato & I cut them in cubes.

I like to marinate thick slices of portabella mushroom, them grill them. They are great with grilled sweet onion and red bell peppers. Then chopped up and put in a pita, or used in a wrapped. However my all time favorite is on a toasted garlic sandwich roll! Yummy!!
