I’ve never done this on the stove before. I have an iron skillet and just regular skillets. Which should I use? Heavy or light? Does it matter?

heavy and as hot as you can get it, make sure to open all windows or you will set off smoke detector

get a cast iron pan, and season it before use, that is one heavy duty pan, you have to learn how to season it properly, my mom has one that has been passed down for a long time and when you use a regular pan versus a cast iron pan that has been seasoned there is no comparison

I’d use the heavy iron skillet. Sprinkle a generous pinch of salt (ideally kosher salt) in the pan, heat it, and cook to desired degree of doneness, Do not overcook. I’ve used this method many times, and the result is a very tender, juicy, and delicious steak.

Preferably one that will conduct heat very quickly. You should sear both sides of the steak and the bake it at 450 for 4 min. Pre heat the oven first !!! Thinner pans are fine as long as you dab some olive oil on first and flip quickly.

Definitely the iron skillet. Don’t forget to marinade your steaks before youcook them. Get your skillet hot before you put steak in, let them cook good on one side before you flip them because flipping them too much can make them TOUGH! Good luck!

the heavier the better… cast iron is ideal, IMHO
