Please provide shopping list of sorts and directions.

    I recommend learning a few techniques like roasting and grilling, both lend to healthy meals. Then pick your favorite foods like chicken and seafood and learn recipes using those ingredients.

    Here is my recipe for roast chicken with herbs. Below is the link for roasted potatoes and a spring salad. A very healthy meal.

    Roasted Chicken With
    Fresh Herbs, Butter & Garlic

    3 1/2 – 4 pound roasting chicken
    3 tbs butter, room temperature
    1 large clove garlic minced
    1 tsp fresh chopped thyme
    1 tsp fresh chopped sage
    Kosher Salt
    Cracked Pepper
    Olive Oil

    Rinse, pat dry chicken. Remove any excess
    skin and fat. Place on cutting board.

    Preheat oven to 350 degrees

    Mince garlic very fine and blend with butter.
    Carefully pull skin up from breast, place 1 tbs
    of butter mixture under skin & spread around.
    Do this on both sides. Take remaining butter
    and mix chopped ingredients together, set aside.

    Place chicken in roasting pan, one with wire rack.
    Drizzle with olive oil, rub over chicken. Salt & Pepper

    Roast for 50 minutes. In microwave safe bowl heat
    butter/seasonings for 30 seconds until melted. Remove
    chicken from oven. With pastry brush, coat chicken
    with herb mixture. Return to oven for 10-15 minutes.
    Internal temp should be 165. Remove from oven,
    tent with foil and rest for 10 minutes.

    Not really the "healthiest" meal, but this is VERY delicious and easy to make;

    Fettuccini Carbonara

    5 teaspoons olive oil
    4 shallots, diced
    1 large onion, cut into thin strips
    1 pound bacon, cut into strips
    1 clove garlic, chopped
    1 (16 ounce) package fettuccini pasta
    3 egg yolks
    1 cup heavy cream
    3/4 cup shredded Parmesan cheese
    salt and pepper to taste

    Serves 6.

    Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.
    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.
    In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.

    I just made something healthy and took 30 minutes:
    Get a pound of shrimp, a bag of spinach, green onions, and asparagras(that is optional). Cook a cup of rice for 20 minutes in boiling water (turned down to a simmer) when the 20 minutes is done add the spinach and green onions and let it sit on the stove 5-10 minutes until heated. Add the shrimp toss and serve with garlic salt for those who want a bit of zip in their food.

    Try this chicken dish — fast, tasty, healthy and easy:

    Chicken Tomato Feta Skillet with Orzo
    A Quick Dinner Recipe
    Chicken Tomato Feta Cheese Skillet
    (Adapted from Bon Appetite March 1996)

    2 tablespoons olive oil
    3 large shallots, chopped
    2 teaspoons dried oregano
    4 boneless chicken breast halves
    2 cups canned crushed tomatoes with liquid (low sodium if possible). Do not drain.
    1 14 1/2-ounce can low-sodium chicken broth
    ½ cup crumbled feta cheese
    2 tablespoons capers (optional)

    1 box orzo cooked (I usually cook the orzo while I’m cooking the chicken)

    Heat oil in a heavy large skillet over medium-high heat. Add shallots and oregano and sauté until shallots are tender, about 5 minutes. Season chicken with salt and pepper. Add chicken to skillet and sauté about 5 minutes. Using tongs, turn chicken over and cook for another 5 minutes.

    Add tomatoes and broth and bring to boil. Cover skillet. Reduce heat to medium-low. Simmer until chicken is cooked through, about 10 minutes (15 minutes if using frozen chicken). Transfer chicken to plate. Boil sauce over high heat until thickened, about 5 minutes.

    Mix in cheese and simmer until heated through, about 2 minutes if you want it smooth. I like my feta chunkier, so I put the feta in and remove the pan from the heat.

    Serve chicken and sauce on top of cooked orzo.

    This is one of my favorite easy healthy recipes – turkey meatloaf made with lean ground turkey and lots of chunky chopped veggies.

    2 1/2 lbs lean ground turkey
    2 eggs
    4 stalks of celery
    2 large carrots
    1 red bell pepper
    1/2 vidallia or yellow onion
    1 cup flavored breadcrumbs
    1/4 tsp fresh ground black pepper
    1/4 tsp red pepper flakes
    1/4 tsp dried oregano
    1/4 tsp dried basil
    1/2 cup ketchup
    1 tbsp hot sauce
    1 tbsp worcestire sauce

    1.) Preheat oven to 425 degrees.

    2.) Chop the celery, carrots, bell pepper and onion. For a chunkier texture, leave pieces larger – around 1/4". Mix in a large bowl with the turkey, eggs, breadcrumbs and spices.

    3.) Mixture can be baked in a large loaf pan, or form a loaf on a baking sheet.

    4.) Bake for 10 minutes, on a lower rack in the oven. Remove from oven and reduce oven temperature to 375 degrees.

    5.) In a small bowl, mix ketchup, hot sauce and worcestire sauce. Apply in a thick layer to the top of the loaf, and sides if using a baking sheet.

    6.) Bake for 1 hour, 15 minutes and slice to serve.

    I am just learning, too. I think chicken is always yummy. Plus you can make it as healthy or unhealthy as you want. Buy a pack of frozen drumsticks and cook the chicken in a pan using olive oil or low fat butter. Use veggies like habaneros to add flavor but not calories. Sprinkle sea salt and ground pepper on the chicken. Now just put it on the stove and let it sizzle until it’s done. The internal temp should usually be aroung 165 degrees F. I would invest in a cooking thermometer if I were you. Get creative with your chicken. How funky is YOUR chicken? haha
