I’m in the military, living on post, in the dorms. I have access to a full grocery store to buy whatever, but I was curious about some healthy (low carb/high protein preferably) meals I can cook using a hot plate. Links or suggestions/recipes would be greatly appreciated. Thanks in advance!

When my son was stationed in Korea, he and a buddy shared a room. They had a hot plate and a crock pot to cook with.
There are so many different things you can cook on that hot plate. Anything you can fix on a stove. So here are some ideas that are low-carb for you. My son was also eating (and still is) low-carb. So is my hubby.
– Stir fry – onions, carrots, celery, chicken, pork, bok choy, etc. If you buy a very small quantity of the vegetables, 1 or 2 chicken breasts, 1 or 2 pork chops, then you won’t have to worry about refrigeration if you eat it all or share. You just need a good-sized skillet.
– Pork chops cooked in cream of mushroom soup. You can coat the pork chops with crushed crackers (the only carbs) and fry in a little oil – just to brown both sides. Pour out the oil, add the can of cream of mushroom soup and water to cover. Stir the soup and water together. Add the meat, bring to a boil, turn down the heat to a simmer, and cook for 40-50 minutes. Cook uncovered so the sauce thickens. Since you won’t have any carbs like rice or noodles to go with it, you want the sauce thick so it’s more like a gravy around it. The pork chops will be very tender.
You can do omelets with whatever kind of meat in it that you want. Same with the veggies. And if you buy your cheese by the slice, you can use it over the omelet with no leftovers to worry about refrigerating. I know here we can buy 6 eggs as well as 12 and 18. If you have a buddy you can share the 6 eggs with, you can make 2 omelets, one for each of you.
Hope that helps. You can also cook fish in your skillet so don’t forget that as an option. Soup would work in your skillet as well but will be interesting trying to get it into a bowl. I like to take cod or halibut and put a little butter in a skillet and brown the one side. I place a package of sliced almonds in there too around the fish. Once the almonds are golden, I turn the fish, place the almonds on top of the fish to keep them from burning, and brown the other side of the fish. Check to see if it’s done (just cut into the fish and if the center isn’t darker than the surrounding meat then it’s done). If it’s not done, add a little water to the skillet and cover. Be careful, it will try to spit. With the lid on and the water in, it will steam it the rest of the way.
For the stir fry you can also use shrimp in it. If it’s raw shrimp, add it the last 3 minutes. If it’s cooked, you just want to put it in there and warm it up.
