I know if you read the labels it recommends smart balance light be used just as a spread and that you use regular smart balance for cooking but I make some (baked) granola bars and I was thinking of trying it. Does it become bad for you somehow or does it just taste funny?

It wouldn’t hurt to try it. Let me know how it turns out.

It doesn’t have the same melting capabilities as real butter or even margarine. When I tried to saute with it, it was just a funky texture and the food stuck to the pan. But, just try it once, you may get lucky and have it come out great! I would cut the batch in half, just in case.

Your baked product will probably not firm up like is normally does.
