We have porkchops asperagus beans cheese and allot of other stuff I do not know what to make him he is a picky eater and a diabetic what should I make that is quick and pretty easy

    I would suggest frying the porkchop in olive or canola oil–maybe 2 chops. If you had some frozen veggies–would be good–and easy. If not–do the asperagus. Maybe slice him some of the cheese–for a finger food. If you have potato–bake a small one for him–if he can eat it. This can be done in the microwave. About 5 minutes total–turning a couple times. I think he need some carbs in his diet–he would know best though–that would be the potato.

    Bless your heart sunshine! Porkchops one should be enough for a diabetic (I am) there is the protein, he can have all the veggies he wants and all you can put in the same pot and I sure love Asparagus -green beans are super too all greens are great and that includes salads (maybe he’s one of those guys who say it’s rabbit food – don’t give up because there are all kinds without lettuce) but never forget carrots peas or turnips (rutebages). He does need some carbohydrates and a small portion of baked beans is good but maybe he would love a boiled or baked potato. If not, perhaps a nice whole wheat bread roll would do the trick. Remember, diabetics still like dessert so maybe try making some jello with 1/2 water & 1/2 milk. I like it and my grandchildren call it "moo" don’t ask, I don’t know but they always want to know if Nana is making "moo". very tasty and doesn’t taste green/orange or red. Maybe this is just your night to cook. I don’t know but if you are the only one doing the cooking you need a little support here. Everything I told you will work, may with a little change up in the vegetable from time to time but you can change the Pork Chop to perhaps Ground beef, piece of chicken, fish a couple of times a week – it’s OK to have a little pasta with tomato sauce and a nice salad. Tinned salmon or tuna is a great idea for lunch. Eggs are a great thing to have, not too many, maybe two a week, depending on how he likes them, poached, scrambled or boiled & chopped up for sandwiches with a little onion + a tiny bit of olive oil & maybe even a pickle -makes a very tasty lunch along with a cup of soup (low fat, of course if it’s tinned)
