The easiest snack for me, which I eat everyday is fruit. It could be grapes, apples, persimmons, cantaloup, etc.
I also eat baby carrots, and celery with an almond sauce that I make with raw almond butter, cinnamon, sea salt and maple syrup. Apples, banana, and jicama also taste good with that sauce. If I feel like being naughty I make a salsa with tomatilla, cilantro, lemon, garlic, serrano pepper, and jalapeno pepper and eat it with tortilla chips that I get from the veg section.
You can throw some asparagus a little olive oil, cayenne pepper and sea salt in the stove set on broil which will be done in about 4 minutes. Try to make spring rolls with rice paper and stuff it with lettuce, tomato, tofu, and seasoning, I dip it in wasabi sauce. I make nori rolls, with just the tomato, cucumber, and avocado, sometimes but rarely rice. Bok Choy with ginger, and soy sauce is nice, simple and takes no time at all.

First off, you are only a "horrible cook" if you keep telling yourself you are. If thats the case, check out some good veggie cookbooks from the library, and treat yourself to a day of learning to cook well. I would be ashamed to admit I couldn’t cook-its such a fundamental part of life. Expand your mind! As for good snacks, keep them simple, or…..better yet-set your mind to making some more challenging things. If you challenge yourself, you may be surprised at the things you can do. My daughter is only 13, and she has been turning out good food and snacks since she was old enough to hold a wooden spoon in her hand. She likes to get new cookbooks, then experiment with the recipes. Her recent great recipe was wheat free chocolate chip pancakes made with super healthy quinoa flour, flax seed, and organic agave nectar. Very tasty, very yummy. Open your mind to new ideas!

Here’s a few suggestions for snacks.
Make a tofu onion dip by mixing light Mori-Nu silken tofu with a package of dry onion soup mix, 2 tbsp onion juice and 2 tsp sweetener (for that sour cream taste without the fat of dairy) and salt and pepper to taste. Dip carrot, celery and cucumber sticks in it.
Wash and bake some whole mushrooms at 350 degrees for 20 minutes; season with salt, pepper and nutritional yeast if you want a cheesy taste. Also good spicy if you add salsa into the cap.
As for actual meals, I’d suggest browsing online and finding one that you find easy, some people don’t like chopping veggies, others don’t like to turn on the oven – so if you want to really have the best results this will be something to look into yourself.
It’s almost impossible to be a healthy vegetarian and eat only fat free/low carb, you’d be sick in minutes. In fact many vegetarians eat a lot of fat, but from healthy sources – avocadoes, flaxseeds, etc. Whole-grain carbs are good for you, and healthy fat too, so every diet in moderation, okay?

Top 10 Vegetarian Snacks
Most of these snacks require some preparation, but much of it kids can do this themselves. Others (like pita bread and mixed nuts) also travel well.
All of the following snacks (except the yogurt with flax and yogurt sauces) are vegan, when made using vegan ingredients. For example, this could mean using vegan margarine instead of butter.
Savoury Vegetarian Snacks:
Falafel,prepared from scratch or from purchased mix. If using mix, this takes about 20 minutes. Dip the fried falafel in one of the following toppings:
Yogurt-tahini sauce: mix plain yogurt with garlic, tahini, and lemon juice (not vegan)
Salsa
Guacamole
Tzatziki (yogurt-cucumber sauce, not vegan)
Microwave popcorn. There is no need to buy microwave popcorn full of fake butter by-products. Make it at home using real butter or margarine and your favourite seasonings. Here is an easy Microwave popcorn recipe on the cheap:Ingredients:
1/2 cup popcorn
2-3 tbsp. melted butter or margarine
Salt and seasonings (e.g. spices, parmesan cheese etc.) to taste
Standard brown paper lunch bag
Directions:
Pour kernels into standard brown paper lunch bag
Fold the top over twice and press down firmly; each fold should be 1/2 inch deep.
Place bag in microwave, on turn table.
Cook on high 2-3 minutes, or until pops are 5 seconds apart.
Toss with melted butter or margarine, salt, and seasonings of choice.
3. Nuts on dates:
Stuff 1/4 mixed nuts or almonds inside 10 small dates or 1 cup seedless grapes.
4. Buffalo tofu (not so healthy, but delicious in moderation with some veggie sticks to go with).
5. Baked corn or tortilla chips with salsa heated and mixed with refried beans.
Sweet Vegetarian Snacks:
Mini pita bread (muesli, apple cinnamon etc.) An excellent all-natural brand is Pita Break. Freeze and toast when needed. Top with peanut butter, nut butter or jam.
Yogurt with ground flaxseed and fruit stirred in.
Organic instant oatmeal with non-dairy milk and/or raisins.
Tofutti cutie "ice cream" sandwich.
An organic apple or celery with natural peanut butter.
Note that some apples may be waxed with carmine, which makes them shiny and more red. Carmine and its intense red colour come from crushed beetles, so are not really vegetarian (2). Organic apples are generally not waxed and might be a better choice.
