    Marinate chicken breasts in lite italian dressing for a few hours and then grill. Combine this with some steamed vegetable, such as broccoli, squash, carrots, and a green salad. For dessert try some sugar free jello, but into squares with some fat free whipped topping.

    Crumbed fillets of chicken breast.
    Sliced tomato.
    Fresh bread.
    Sliced real cheese. ( not the processed type )
    Avocado or yogurt

    Light and Easy Tetrazzini

    Ingredients:
    1 1/2 cups diced deli chicken breast
    1 small onion (chopped)
    1/4 cup water
    1 (10 3/4 ounce) can low-fat cream of mushroom soup
    3/4 cup shredded low-fat cheddar cheese
    2 cups cooked spaghetti noodles
    2 ounces diced pimentos
    1/8 teaspoon ground black pepper

    Steps:
    1. Spray a nonstick skillet with cooking spray.

    2. Over medium heat, Sauté chicken and onion together for 3 minutes.

    3. Stir in water, soup and cheese.

    4. Reduce heat and stir until cheese melts and stir until mixture is smooth.

    5. Blend in remaining ingredients.

    6. Place cooked pasta in a large bowl and toss with cheese and vegetable mixture.

    7. May sprinkle with Parmesan cheese if desired.

    U ever tried macaroni cheese with chicken fillets?

    Cube chicken fillets and lightly brown them in olive oil with spices of your choice, eg.. garlic lemon juice, salt,pepper etc.
    Add half a tin of sweetcorn and cook well.

    Mix with boiled macaroni
    Layer in a dish with bechamel sauce (flour,butter,milk,pinch of nutmeg)
    Sprinkle with lots of cheese of your choice and some pizza herbs

    Bake til cheese is melted to your liking

    Divine

    Stir fry…your choice of veges :-) , Baked with cream of mushroom…..season lightly with pepper and garlic salt, bake, just before its done…pour cream of mushroom over chicken.

    Heres a few other simple and fast recipes:

    Fried spam with string beans or long beans….lightly seasoned.

    Fried cabbage with spam or portugese sausage….lightly seasoned.

    Here’s a menu that might blow your mind….it blew mine when I was growing up and it blew my kids minds when I fed them like this once lol :

    1 can corned beef hash…open can, put on dish, serve
    1 white or yellow onion….sliced into quarters, put on dish with some Hawaiian salt on the side, serve.
    1 small bunch green onion…put on dish with the other onion and serve.
    1 can sardines….open can, put in bowl, add some shoyu sauce, serve
    1 bowl rice and or poi…put in bowl, serve

    Grilled Chicken and Key Lime Salsa

    Ingredients
    1/4 cup Worcestershire sauce
    3 Tbsp fresh lime juice, from Key limes
    1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces
    3 medium orange(s), sectioned, white pith and seeds removed
    2 Tbsp fresh lime juice, from Key limes
    2 Tbsp scallion(s), chopped
    1 Tbsp cilantro, chopped
    1 tsp chopped green chilies, or more to taste
    Instructions
    Combine Worcestershire sauce, 3 tablespoons of lime juice and chicken in a ziptop plastic bag. Refrigerate up to 4 hours.

    Meanwhile, combine remaining ingredients in a medium bowl to make salsa. Refrigerate for a minimum of 1 hour.

    Preheat grill or broiler. Grill or broil chicken until cooked through, about 4 to 5 minutes per side. Serve chicken with salsa.

    Grilled chicken wraps. Nice and light on a hot summer day.
    You can add as much veggies as you want and seasonings.

    Try Chicken Carbonara. Its a great dinner!

    1. Season boneless and skinless chicken breast(s) to your liking, and grill until done.
    If you can’t grill, then pan-sear on both sides for 1 min. (oil or butter optional.) Then bake for 17 mins. or until chicken is completely done.

    2. Make any sauce you’d like. Preferable Parmesan or Alfredo.
    If you can’t make the sauce, buy from store and heat up.

    3. Rapidly boil fresh frozen peas in lightly salted water for 4-7 mins. Immediately following, drain peas from hot water and place in icy water. This process stops all further cooking and keeps the peas’ fresh color and taste. Then drain again and put peas in a bowl.

    4. Fry a few strips of bacon. Cook crispy and crumble.

    5. Rapidly boil any type of pasta you desire. Then drain, Put back in pot, and stir in a spoonful of olive oil so the pasta don’t stick together.

    6. In a sauce pan, combine the sauce, crumbled bacon, and fresh peas together. Heat it up, but don’t bring to a boil.

    Serve by plating the pasta on the bottom, spoon on sauce, and placed the chicken, sliced, on top and enjoy!
