    broccoli pickles! maangchi.com has a recipe for broccoli pickles. substitute sugar with splenda, agave nectar, stevia, etc.. whatever you prefer.. would tend to advise to stay away from splenda, as it’s only one molecule away from being bleach & is so bad for you that aspartame tried to sue them for health reasons. lol

    in regards to green beans.. i usually just add a bit of butter, some salt, pepper & garlic powder (or fresh garlic) and let them boil or steam. garlic is my best friend & makes everything taste better.

    Roast them

    put them on a cookie sheet
    toss with a little olive salt
    add salt

    bake at 400 degrees for 45 minutes or until they’re nice and caramelized

    They’re PACKED with flavor when roasted, even kids love them

    Scatter like-size trimmed broccoli with vegetable oil and season with coarse salt and freshly ground black pepper. Roast at 375 degrees until fragrant and slightly charred around the tips. Remove the broccoli from the oven and sprinkle lightly with balsamic vinegar and/or grated Parmesan cheese.

    Be careful with green beans. They are one of the sugar fruits (mostly sugar) so it’s best to eat them less frequently than others. Green beans are best with salt and butter, but you can also soften 1 tablespoon of shallot in a pan and then add green beans that have been blanched, shocked in ice water and patted dry.

    Anyway to cook boccoli and green beans is going to be low catb unless you add breading, heavy creamy sauces etc…

    Steam, roast, bake, saute, etc…
