i’m not a good cook to begin with, but i am a mother of 3 and would like to eat better. i would like to keep it simple and fast. if anyone could recommend a book or web site. thanks

    The best thing for me is the George Forman grill but you don’t really need that. I just buy fish (usually Talapia) because they come in a package flash frozen & take no time at all to dethaw under water. I just drizzle a little olive oil & put some blackened spice on it & throw it on the grill. Takes about 5 minutes. Also, I make brown rice. It’s not instant. It only takes about 20 minutes & I throw some green beans in a pot to boil, then I just use a tiny bit of olive oil with salt & pepper.

    Another thing I really like is making chicken with vegetables. It’s so easy but SO good. You just put chicken in a baking dish with some slices of onion, bell peppers & rounds of tomatoes, then squeeze some lemon juice & drizzle with olive oil & season with salt & pepper. Then bake it. I think my Mom normally puts it at 375 degrees for an hour.

    Moosewood Lowfat Favorites is one of my staple cookbooks. I use it all the time and highly recommend it. There are lots of quick and easy recipes. You can find it at Amazon.com.

    You might not be trying to lose weight but I use WeightWatchers New Complete Cookbook & WeightWatchers All-Time Favorites. I eat a whole lot better and I am maintaining the weight I want to be and my family doesn’t even realize that they are eating a lot better. The just think that I changed the reciepes and they love the changes. I go the books at Wal-Mart. Enjoy them!

    Cherry tomatoes
    Salad Leaves (your choice of salad)
    Parsley (optional)
    Pasta
    2 Chicken breasts
    1 carrot
    1 cucumber
    1 onion (optional)
    Salt and Pepper to taste
    Olive oil

    Mix chicken in salt and pepper.
    Heat oil in a pan. Once heated add the chicken. Cook chicken on both side till well cooked.
    Take out of the pan and cut chicken into bite size pieces.

    Next cut cherry tomatoes into half, cut carrot and cucumber into small discs, then the salad and parsley. Last the onions.

    Boil the pasta. Once boiled wash with cold water to cool it.

    In a pot heat a tsp of olive oil. Once heated add the onions and carrots after a minute add cucumber and chicken. Once all the veges are heated a little off the gas. Now mix the rest of ur veges and give it a good mix. Then add pasta into the salad with a tsp of olive oil, salt and pepper.

    More Veges and less meat is always a healthy way to go..

    well its pretty easy to make salads and they r healhty. omlettles are nice to and u can add vegies to it

    Just forget for frying-only boil, stew and roast dishes.
