    You are in luck. Healthy things don’t have to be expensive. Cut down fat and sugar and salt. Add more vegetables, pulses and fiber. By doing this to any recipe, it will immediately become healthier and still stay economical. Say you like a baked potato that is loaded with great things on it. Make sure you toss out the butter and sour cream and bacon but add salad or friend mushrooms and vegetable medley that has been stirred through with a little low fat cheese or say italian dressing. Lots of flavour, very healthy and not dear.

    If it is pasta, again keep the sauces vegetable based and use fresh peas, cracked pepper and diced carrots that have been steamed and stir through a little bechemel sauce.

    Soup is a great thing to eat and cook. Use lentils, vegetables and lots of tasty herbs and seasonings. But lay off the fat and salt etc.

    The only thing you need to worry about is making balanced meals! That is the healthy cooking demand.

    You must have protein, carbohydrate and Fat in your menus. You must have different colors on the plate and different textures so it isn’t boring.

    There is no real trick to healthy cooking other than to keep foods exciting, interesting and colorful. Don’t worry about the current edicts that Fat and Sugar are verboten! Just make good food!

    One thing I found helpful was to get bags of frozen fresh fruits and veggies. You can thaw out what you need for each meal, and they will last for a long time. Plus, this way you can get fruit out of season!

    Fresh ingredients make a world of difference in taste. Trader Joes carries a lot of tasty healthy foods and are low in cost. Farmer’s markets are a great resource.

    Buy very little pre-packaged…shop the perimeter of your supermarket…that is where all the healthy items are….milk, eggs, meats, yogurt, cheese, produce, seafood etc. Think about your favorite store and you’ll note these things are all on teh perimeter! No boxed items. I think frozen veggies are great and a lot cheaper than fresh when not in season…so go that route instead of canned as they often add a salt or sugar solution to keep fresh. Don’t start denying yourself things either…if you say no more ice cream…you’ll go nuts one day and eat a whole tub! Instead say, ok ice cream….but twice a week and a healthier type….like fat free vanilla with a tablespoon of peanut butter on top. Or sherbert or whatever. I can’t stand when people tell me they aren’t eating a certain food…that’s a recipe for disaster….you want to be able to live this lifestyle….so adjust it properly, but don’t eliminate things you love…
