Olive oil is like wine in terms of more refined flavours from different olive groves.
Extra virgin olive oil is from cold pressed olives, and as you go down the list you will get weaker olive flavour because refined oil has been added.
You didn’t say why you ‘need to start cooking with olive oil’ – maybe for health reasons? There are plenty of unsaturated (preferably monounsaturated) oils out on the market you can use for various purposes in the kitchen. Eg. I like using flax seed oil for omega properties and I use it on salads and sprinkled on vegetables and other things.
Keep in mind that every oil has it’s ‘breaking’ point- become unhealthy when they’re heated to a certain temperature. Olive oil is an unrefined oil (extra/virgin) so it’s best used at lower temperatures (eg below about 170 degrees)

Light and extra light have the least taste.
Extra Virgin and Virgin have the most taste.
Buy Bertolli or Berio "light" it’s like water to me.
It doesn’t taste anything like olives.

Avoid California( overpriced oils) they are eon’s away from catching the Tuscan, Apulian and Greek oils.
The best oil on Earth today is "Fernando Pensato" ( from Puglia).
Some Sicilian oils with their grassy taste are also very desirable ie. "Frantoia" from the Manfredi Barbera stable of fine oils.
McVoy has no chance against most of the famous imports.
I wouldn’t buy it for 1/2 the price.

I use extra virgin olive oil. any brand as long as it is extra virgin. It was the least taste

olive oil tastes nothing like olives, so use any of them, virgin is better for salads dressings and things, virgin is good for cooking and light is good for watching ur fat intake

If you don’t like olives ….then there is no olive oil you will like.They taste of olives and for me they give things an off taste..I personally don’t care for olive oil. ( but love olives)..I use canola which is a healthy oil.

All olive oils are going to taste like olive oil. Pick one with the word light on the label if you dont like the rich taste. Not exactly sure why you dont just use canola or peanut oil. Olive oil with garlic is heavenly.

The short answer is Goya Extra Virgin.
The long answer:
My favorites because they are complex oils that complement many foods are Goya, Lucini and California Olive Ranch. The cheapest is Goya Extra Virgin, is my very best favorite for taste (not overbearing) and cheap (a quarter of a dollar per oz.). Look for it in the hispanic / mexican food section if you don’t find it with the other oils. In Walmart, I find it most in the ethnic section.
Someday, you might like to try olive oil with more flavor. If you want brand names for the best and can afford it buy McEvoy Ranch or B. R. Cohn. These have intense, complex flavors but have to be paired carefully with foods, as flavors may overwhelm or clash. Drizzle on foods to add flavor.

olive oil should only be used in dishes where the flavour would be complimentary (Italian greek etc)
its not for every day. go with pure oil olive oil burns too easily though. you want something with a higher smoke point for fast frying which is what you want to do if you want low absorption. veg oil is fine or canola
to hot pan add cold oil. let it rise in temperatureto where it shimmers then add food and move it around very quickly (Saute)

there are tons of other oils on the market
and olive oil doesnt really taste like olives
