via wikipedia, “The bitter almond is rather broader and shorter than the sweet almond, and contains about 50% of the fixed oil which also occurs in sweet almonds. It also contains the enzyme emulsin which, in the presence of water, acts on a soluble glucoside, amygdalin, yielding glucose, cyanide and the essential oil of bitter almonds, which is nearly pure benzaldehyde. Bitter almonds may yield from 49 mg of hydrogen cyanide per almond..”

2 questions
1- why would you drain the water the almonds have been soaking in? wouldn’t that have most of the nutrients and flavor and so when blending its creamier ?
2- and to authorgirl, what would be the point to rinsing almonds after soaking? what was the foodists reasons? i could see before but after not sure why
thanks

Thank you so much! My husband and I have recently become Vegans and we are enjoying our NEW found foods. I had really never tried making my own almond milk. Thanks to you – I will NOW!
And I love Agave Nectar TOO! Thanks again!

It’s only bitter almonds that contain a cyanide substance, regular sweet almonds doesn’t.
If you use bitter almonds, use them as spice.

Great vid. Do you know of a way to make almond milk without using a blender.
The speed of the blades in the blender do damage the proteins and other nutrients.
its best to use another method. Ive only just discovered this and am trying to find another way to make almond milk in a more gentle way.
God Bless.

According to most raw foodists, it IS very important to rinse the almonds thoroughly after soaking.

To answer ods1ODS, regular almonds, the ones you buy at the store, do NOT make cyanide when mixed with water! however there is a type of almond, the bitter almond that can produce cyanide. I don’t think it’s ANY cause for concern because im pretty shure bitter almonds are not sold at youre local Safeway, or anywhere for that matter. Im also pretty shure it’s not as simple as “Just add water”.

If you want to buy a blender from an ordinary store, and can’t find that grinder, then I recommend the Braun blender, which is pretty tough.
Too bad almonds are so darn expensive.

Thanks for tips, just made almond milk without soaking nuts, still tastes great. Also added dates in blender to sweeten. Yum!
