    I have found that marinating chicken helps to keep it moist. And be sure not to overcook it. I sometimes use a balsamic vinaigrette salad dressing as a marinade. It give the chicken a great zingy flavor. You could use basic Italian dressing too.

    I always marinate it with garlic, olive oil, and other spices and then cook it on the bbq. it’s really healthier that way and it tastes great.

    1) Season it with lemon pepper.

    2) Cook chicken with flavorful vegetables (e.g. carrots, onions)

    3) Use flavored Pam (e.g. comes in olive oil flavor)

    HEALTHY LEMON HERB CHICKEN (not grilled, but quick and easy)

    What You Need

    * 2 skinless, boneless chicken breast halves
    * 1 lemon
    * salt and pepper to taste
    * 1 Tbsp. olive oil
    * 1 pinch dried oregano
    * 2 sprigs fresh parsley, for garnish

    What You Do

    * Cut lemon in half, and squeeze juice from 1/2 lemon on chicken. Season with salt to taste. Let sit while you heat oil in a small skillet over medium low heat.

    * When oil is hot, put chicken in skillet. As you saute chicken, add juice from other 1/2 lemon, pepper to taste, and oregano. Saute for 5 to 10 minutes each side, or until juices run clear. Serve with parsley for garnish.

    Marinading will give it some flavour, but many marinades have a fair amount of oil Very little actually gets into the chicken though. Also, you can brush on some barbecue sauce while it’s grilling, just enough to add some flavour. Also, you can make chicken fingers, dip the meat in melted margarine, then roll it in seasoned bread or cracker crumbs. Then you bake it.

    I buy vinaigrette/dressings (try to stick to the healthier ones) and use them as marinades for my chicken. I either will freeze the chicken right in a baggie with some or I will just toss some chicken breasts in a bowl with some. Then put it in the fridge for the day and when supper time comes we grill it. My favorites to use is (no matter what brand but Newman’s Own has some good ones) roasted garlic, sun-dried tomato, sesame ginger. Always adds good flavor.

    Now for not grilled but baked chicken one of our favorites is Salsa Chicken. You can make your own salsa- I do sometimes but I do buy it sometimes also trying to avoid ones with high salt and sugar. I simply toss the chicken in a pan, poor the salsa over the chicken and put it in the oven for a two hours at 300, I do turn the oven up to 350 for the last 20 minutes. It is also great in the slow cooker for the day. I serve it over whole wheat pasta.

    This is very similar to the salsa I make- I don’t add jalapeno peppers though:)
