I have done freezer cooking for a while now, but I was recently diagnosed with diabetes. I have to eliminate both potatoes and rice for awhile as they make my blood sugar skyrocket. I can do baked potatoes without a problem (something about glycemic load). So, other than stir fry and chile con carne, do you have suggestions or links for lower carb foods? Oh, and I can’t have stuff with tomato sauce for now because of acid reflux problems.

I don’t know what you mean by ”freezer cooking”???
Do you mean foods you can freeze?
As far as ”low carbs” I can help.
I suggest you get a carb counting book so you know what foods to avoid
Meat and leafy veggies work well
Salmon or chicken on a salad
Steak and broccoli
I think sprouted grain bread have less carbs but here the book will help you out
Eggs and ham, bacon
Cheese,most dairy
Check list for low carb veggies and fruit
You can make alot of different soups to freeze
