Artichoke is an excellent source of fiber and vitamin C, and a good source of folate and magnesium. Artichokes also are a great source of powerful disease-fighting antioxidants.

If you take the stem she cut off, slice off the course green outside, what’s left inside has the same taste and texture as the heart. You can steam that too.
