Cooking cabbage?

We low carb in our home. I’m really very good with different recipes, we don’t do the huge amounts of fat that so many do and eat pretty healthy. Basically we have done away wih flours and sugars and anything made with them. Including high sugar fruits.

We eat tons of grilled meats and fish, salads and green veggies. I have a roast in the oven and was about to cook a head of cabbage. I just fried up a bit of bacon and was going to saute the cabbage in a bit of the drippings with a little onion.

HOWEVER…. I would love any new and fresh ideas. When I have cabbage the way I discribed I really miss having it with cornbread. I would love to know another way (besides cole slaw) to cook cabbage.

So far Burt, you’s is what will have to be since today I only have a regular old head of green cabbage. HOWEVER, Sipper, I’m thinking your’s is on the menu for this week. Oh my goodness, if I only had some nappa right now… I’ll wait a few minutes to see what come along for today.

    Grilled cabbage really is amazing. It makes the cabbage so tender and full of flavor. As said before, you cut the cabbage in quarters and place in tin foil. We always add butter, salt, and pepper before we grill them. You can also try a little garlic butter and white onions for more flavor. Grilled cabbage goes well with beef Shish Kabobs. We make a summer dinner of Shish Kabobs, grilled cabbage, and a side salad (or baked potato if you’re feeling like a few carbs).

    I like to quarter the head and boil it until it is just tender but still slightly crunchy. Then melt butter down between the leaves, salt and freshly ground black pepper.

    hmm, intresting.

    I just thought you could possibly, mix up some ground pork, leeks, soy sauce, rice wine, some roasted sesame oil, pinch of salt and pepper, chop up a little nappa cabbage and mix it together with a tablespoon of cornstarch (to hold it together.) and then wrap it in a cabbage leaf that you have cooked a few minutes in very hot water, then put them all in a steamer for about 20 minutes or so till the pork is done.

    Next time, try quartering the cabbage, package it with onions, salt and pepper and butter or margarine in tin foil and place on the grill until tender. This gives the cabbage an awesome flavor and is good as a left over. You can substitute other veggies as well. You could even add the bacon for flavor. I love cabbage on the grill in the summer with a fresh steak. YUM!

    I put a little olive oil in a skillet, then cut up the cabbage and put it in. As it fries, add a little salt and pepper to taste. As it cooks down (about 15-20 minutes) and gets brown around the edges, I add a packet or two of Splenda, depending on how big the cabbage is and let it cook another minute or two. The trick is not to let it cook too long, but long enough to wilt a little. Stir it often as it cooks.
