I have friends coming over tonight for supper, they will have been at a party today where they will probably snack out so they have said don’t worry about cooking a big meal. Please could I have your ideas on what I could do for them?

    For my culinary school’s focus on cooking lightly using only vegetables we made a fantastic Ratatouille. The recipe ingredients can be altered depending on what your guests might like. Also, your knife cuts don’t need to be precise. Mine had to be for school and chef critiques so the sizes of cuts we use have to be listed on our recipes but it helps to have a general guideline of how to cut them.

    1/2oz Olive Oil
    1/4oz Garlic — minced
    2oz Onion — small dice
    1/2oz Tomato Paste
    6oz Chicken Stock — prepared
    6oz Yellow Squash — 1/2" dice
    6oz Zucchini — 1/2" dice
    6oz Yellow or Red Pepper — 1/2" dice
    6oz Eggplant, peeled — 1/2" dice
    6oz Mushrooms — 1/4" dice
    3oz Tomato, concassé — 1/4" dice
    Salt & Pepper — to taste
    1 tablespoon Basil — chopped

    Sauté the garlic and onion in the oil until translucent, add the tomato paste and pincé, deglaze with the chicken stock. Add all the vegetables and stew the mixture until almost dry and tender. Season with salt and pepper to taste, sprinkle with the chopped basil.

    Strips of toast with different toppings are good.You can have ham , cheese, tuna and kiwi fruit sliced over it.Anything really.Do some baked potatoes and fill them with grated cheese and pineapple.

    Salmon? pop it in the oven in seperate foil parcels with butter and lemon. Serve with microwave rice, top with fried onions, peppers and mushrooms fried in olive oil and butter. You can prepare the parcels well in advance and part fry the veg ready to finsih later. Put a wedge of lemon on each plate.

    well, you could have some salmon spiced with ginger and wedges of lemon if you want to make it fancy. Also, I do this quite often, but I buy some plain crackers like Carrs and then cut some slices of cream cheese and some pieces of smoked salmon and maybe some parsley for decoration. It’s yummy and looks elegant. I hope it works!

    Make some really crispy thin crust pizzas (without all that heavy bread it is more satisfying than a snack but not as heavy as most pizza)

    A hearty salad with lots of vegetables, a lean meat, easy on the cheese and make a light vinaigrette dressing instead of a creamy gloppy one.

    Meat and cheese platter with crackers, fruit chunks, and olives.
