My husband and I are both overweight and he’s diabetic, so we both should eat low-carb meals. He does most of the cooking and doesn’t have the patience for difficult recipes, plus we can’t afford a lot of fancy ingredients. A recommended recipe or website would be great. Thanks!!

You really shouldnt focus on just low carb. Your body needs carbs for energy… you just need to eat GOOD carbs… like Whole wheat, not SUGAR! Sparkrecipes.com has alot of awesome low cal recipes on it. They are not all low carb, but most are low calorie and you will find lots of great info.
I love to get simple recipes from there – usually chicken or something that requires little to no prep and I can just pop it in the oven. Sounds like your husband and I have similar cooking styles LOL!

With the Atkins diet, you can pretty much plan your own very
easily. I find it too strict and found a good compromise at -

I was on Atkins for 3 months, lost 55 lbs. Majority of my meals included chicken and my favorite that was really easy to make was… hot wings. I buy the chicken wing drumettes that are in a big bag found at Wal-Mart or Kroger. I would boil them til they’re done. Throw them on a baking sheet and broil them for awhile. For the sauce I would use Louisiana Hot Sauce found at Wal-Mart too. If I was wanting a bolder and not so hot sauce, I’d buy the "Budwiser Buffalo Wing Sauce" You can also make them with melted butter and garlic.
If you use the wings and louisiana hot sauce, you can eat all you want because it’s 0 carbs. If you do the Budwiser, that’s like 3 carbs.. the garlic and butter mix I’m not sure of but it’s not high – carbwise.
I usually made enough for dinner and lunch the next day.
For breakfast, I would make scrambled eggs mixed with some Eckrich sausage, cheese, bell peppers and onion.
Just stay away from the breads, the sugars and keep your fruits to a minimum since they are high in sugar.
