    Baked Asparagus

    2 bunches asparagus, washed
    1 to 2 tablespoons olive oil
    Coarse grained salt and cracked black pepper

    Preheat oven to 400 degrees F.
    Place asparagus in a large plastic bag. Drizzle half the olive oil over the asparagus, seal the bag and shake until asparagus is coated evenly with the olive oil. If necessary, add only enough of the remaining olive oil to coat the asparagus. Place the asparagus in a single layer on a cookie sheet, season with salt and pepper. Bake until tender or crunchy depending upon your preference, about 12 to 20 minutes.

    Roasted Asparagus

    1 lb. asparagus
    2 Tbsp. olive oil

    Clean asparagus, and take each stalk in your hands. Bend the stalk, and the asparagus will naturally snap at the point where it becomes tough. Place the tips on a heavy baking pan and toss with the olive oil. Roast at 425 degrees for 5-10 minutes, until asparagus is tender and begins to brown. Serves 4

    2 lb Fresh asparagus
    Salt

    Break off and discard the tough ends of the asparagus. Peel the stalks.
    Rinse the asparagus, drain it well, and wrap it in a large sheet of foil,
    crimping the edges tightly to seal the package. Bake in a preheated hot
    oven (425ø) for 25 to 30 minutes or until done to taste. Season to taste
    with salt. Calories: 38 per serving. Yield: 6 servings.

    This may not be low carb but it is easy and tastes great. I have been making it since I was 5. ( I am 37 now). This is also a good casserole to take to dinners, parties, friends when someone passes away, etc.

    English pea and asparagus casserole

    2 cans Lesure (misspelled) English Peas (early peas) drained
    2 cans aspar. spears drained
    2 cans cream of mushroom soup
    cheddar cheese
    bread crumbs

    In a greased cass. dish, alternate layers of 1st 3 ingredients. When all used up, bake for 30 minutes in a 350Degree F oven.
    Add cheese then bread crumbs on top. Bake til cheese is melted about 10 min.
    Even my brother and his family love this dish, and they don’t like asparagus!!!!!!!!! If they like it, it has to be good.

    ASPARAGUS WITH EGGS

    Here is an asparagus recipe hope you enjoy. If your want to see more asparagus recipes
    Put boiled asparagus into a heated baking dish, season well, break eggs over it and put into the oven until the eggs are set, or beat the yolks and whites of four eggs separately; mix with the yolks two tablespoonfuls of milk or cream, a heaping teaspoonful of butter, salt and pepper, and lastly the beaten whites of the eggs; pour all over the asparagus and bake until the eggs are set.

    BOILED ASPARAGUS
    Prepare as for baked asparagus, and when boiled tender in salted water, pour over a drawn butter sauce; or prepare a sauce from the water drained from the asparagus by thickening with one tablespoonful of butter, one tablespoonful of flour and the beaten yolk of an egg, to which add seasoning and lemon or nutmeg to suit taste.
