Don’t they sell ‘Twinkies’ in the U.K….and they’re creme filled too…hahahaha… Just think…no dirty dishes, no mishaps, no WORK…and, they’re inexpensive too…

My suggestion is to try Delia’s recipe for a sponge cake. They are always perfect, trust me… or Delia.

You can leave out the passion fruit if you want or replace it with fresh stawberries, or jam, or whatever. Good luck!

You will need
225g unsalted butter
225g caster sugar
1 teaspoon vanilla extract
4 large eggs
200g self-raising flour
25g cornflour
1 teaspoon baking powder
3-4 tablespoons of milk
Line and grease 2 x 21cm sandwich tins and pre-heat the oven to 180/gas mark 4. Put all the ingredients except the milk, into a food processor and pulse it until you have got a smooth batter. Add the milk gradually until it is soft and of a dropping consistency.
Pour the batter into the prepared tins and bake for about 25 minutes, until the cakes are beginning to come away from the edges and are springy to the touch on top. Leave the cakes in the tins for about 10 minutes on a wire rack before you attempt to take them out of the tins and once out of the tins allow to cool completely and then you could sandwich them with a few tablespoons of raspberry jam, a punnet of raspberries and 125ml of double cream , whipped.

SPONGE CAKE
4 eggs
2 c. sugar
1/2 tsp. salt
2 tsp. vanilla
1/4 c. butter
1 c. boiling milk
2 c. all purpose flour
2 tsp. baking powder
Beat eggs until very light. Beat in sugar, salt, and vanilla. Beat in butter and boiling milk. Sift together flour and baking powder and beat in very quickly. Immediately pour into prepared pan. (Makes two 9 inch layers or 13 x 9 inch oblong.) Bake at 350 degrees for 25-30 minutes or until cake tests done.

I made 2 cakes yesterday for my sons school and they wernt fit to leave this house, and I had to pay an expensive visit to the bakery this morning, i squashed it a bit before I passed it off as my own

If you want light and fluffy, make a yellow cake…sponge cake isn’t suppose to be light and fluffy…..google sponge cake and see what they have!!
