Pure olive oil will burn at a lower temperature than light olive oil. So for sauteeing, frying, etc. at higher temperatures, pure olive oil will burn and taste bad =P

Plus some people don’t like the taste of pure / extra virgin, and finally, it’s supposed to be better for you in the long run.

LOVE olive oil. This place near me drizzles their pizza with olive oil that you can almost taste the flowers in… i wish i could find that stuff!!! =( The stuff in the store never tastes that good…

What chefs are you referring to? All of the TV chefs use regular olive oil.

some chefs use light or extra light olive oil for when they need a little fat in thier cooking light or extra light when refering to olive oil in fact refers to the color and texture of the oil not the calories or fat content according to my online source there is in fact 14 grams of monounsaturated fat in light and extra light olive oil
