southwest black bean salad:
1 can black beans drained
1 can white beans drained (I use S&W)
1 small can sliced olives drained
1 can sweet corn drained
1 tomato chopped
1 stalk celery chopped
1/2 red onion chopped
1/2 green bell pepper chopped
1 jalapeno seeded and finely chopped (optional)
1/2 cup chopped cilantro
2 tbsp olive oil
Juice of 3 limes
salt & pepper to taste
Combine all veggies and beans in a large bowl. Drissle with olive oil, the lime juice and salt & Pepper. Toss… let sit in fridge for half an hour and toss again. Note: I rinse the beans, olives and corn to get rid of the extra sodium before draining…
YUM! And SOOOOO healthy for you. Lots of fiber, veggies, and the olive oil is great for weight loss and heart function. My family can’t get enough of this, I always make double the recipe and they really enjoy the left overs for days.

Hawaiian Fruit Salad Recipe
Ingredients:
3-1/2 cups cubed fresh pineapple
3 cups honeydew balls
1-1/2 cup cantaloupe balls
1 medium mango, peeled and cubed
1 cup green grapes
1 cup halved fresh strawberries
1 kiwifruit, peeled, quartered and sliced
Banana Dressing
2 small bananas, cut into 1-inch pieces
1 cup (8 ounces) reduced-fat sour cream
1/4 cup packed brown sugar
1-1/2 teaspoons lemon juice
Directions:
In a large bowl, combine the first seven ingredients. In a food processor, combine the bananas, sour cream, brown sugar and lemon juice. Cover and process until smooth. Serve with fruit.
Nutrition information per 3/4 cup fruit with 2 tablespoons dressing:
112 calories, 2g fat (1g saturated fat), 6mg cholesterol, 21mg sodium, 24g carbohydrate, 2g fiber, 2g protein.
Diabetic exchange: 1-1/2 fruit, 1/2 fat

Desert rolls. These are just a quick, easy,CHEAP, reduced calorie cinnamon roll. All you need is one package of the reduced fat croissant type rolls [ I think they're Pillsbury], light margarine or light butter, splenda, and cinnamon.
Just unwrap the rolls and tear apart into triangles. Spread on a little of the butter, sprinkle with a splend/cinnamon mixture. Roll up dough as directed. Put a little more butter and splend/cinnamon mixture on top, and bake as directed. Easy as that. It’s almost completely sugar free, and way less fat and overall calories than a cinnamon roll.
Optional: you could roll up things like nuts or raisins in to the dough before baking, and you can also find several reduced sugar frostings on the market today, should you want it frosted.

Easy & Elegant Pomegranate Salad
Main:
1 head romaine lettuce, washed & torn
1 bunch spinach, stems removed, washed & torn (can use all romaine if no spinach on hand)
Seeds of one pomegranate *
½ cup toasted pine nuts *
½ cup crumbled (or grated) feta cheese *
Dressing:
1/3 cup grapeseed oil *
1 tbsp maple vinegar (or red wine vinegar)
2 tbsp. maple syrup
1 tsp. Dijon mustard
½ tsp. oregano
Salt & freshly ground pepper
Directions:
Whiz (or Whisk) dressing ingredients together; store in refrigerator to let flavours blend.
A food processor or blender to whiz the dressing, makes a lovely creamy dressing.
Toss lettuce and spinach together in a large salad bowl. Toss with salad ingredients just before serving. Add feta, toasted pine nuts and pomegranate seeds on top. Serves 6.
Recipe can easily be doubled for large crowds. Or only cooking for 1 or 2? No problemo… just keep the dressing in the fridge, and toss in small batches one meal at a time.
