    This is really delicious. And the vinaigrette would be great with any other salad as well.

    Arugula Salad with Lemon Vinaigrette

    Salad:
    arugula
    paper thin slices of celery
    paper thin slices of fennel
    shaved Parmesan

    Lemon Vinaigrette:
    1/3 cup fresh lemon juice
    1/3 cup whole grain Dijon mustard
    1 teaspoon finely grated lemon peel
    2/3 cup olive oil

    Place first 3 ingredients in medium bowl. Gradually whisk in oil. Season to taste with salt and pepper. Can be made 3 days ahead. Bring to room temp and rewhisk before using.

    we like ours with spinach, romain, tomatoes, green olives, cucumber, carrots, broccoli florets, squash , zucchini and avocado. just toss and add your favorite dressing..we love Zesty Italian. or just a bit of olive oil and Fresh squeezed lemon juice.

    Not the healthiest but the BEST you will ever have

    Veggies
    Large head of Napa cabbage – torn don’t use spines
    3 bunches green onions chopped
    1 large red and yellow pepper diced

    Crunchies
    2-3 tbs butter
    3/4 cup slivered almonds
    1/2 cup sesame seeds
    2 pkgs chicken ramen noodles
    Melt butter and toast almonds, sesame seeds and crunched up ramen noodles and flovor packets in a skillet – let cool

    Dressing
    1 cup canola oil
    2/3 cup sugar
    3 tbs rice wine vinegar
    It will look wierd but don’t worry

    When ready to serve combine veggies and pour on dressing and stir then sprinkle on crunchies and fold in

    Believe me this one will have everyone talking and wanting the recipe

    Always use dark greens like Romain, Red Romain, and fresh spinach leaves. Iceberg is bitter and lacks good nutrient content.

    My spicy chicken salad:
    -Grill 6oz of shredded chicken breast in lime juice, chili powder, and hot sauce in a pan until the chicken has good texture and the "sauce" has rendered down.
    -Take 2cup of good dark greens (measured when compacted not loose) and chop them just a few times so you don’t have as bulky of bites on your fork
    -put greens down in a large bowl
    -cut roma tomatoes in long strips, and wash away the "guts" (the seeds and jelly stuff)
    -add tomatoes to bowl
    -add 1/4 cup shredded mexican cheese to the bowl
    -add 1/3 cup mild or medium chunky salsa of your choice to the bowl
    -as soon as the chicken is ready, slide it out of the pan on top of everything that’s in the bowl and serve.
    -if you’d like, gut the seeds out of one fresh jalapeno and chop it up, throw it in the pan with the chicken when you START cooking it, this dulls the bitter crunch a bit so they aren’t an overpowering ingredient
    —this is a very healthy salad with a good spicy kick

    Now, the best part about that salad, is you can make different renditions of it. You can use lemon juice, olive oil, and garlic for the chicken (great smell for your kitchen as a bonus) instead of the chili powder and hot sauce – or you can use orange juice (preferably with a lot of pulp) which when rendered down causes the chicken to have a nice sticky orange sauce on it.

    If you’re using those options and are going the non-spicy route, then use mozzarella instead of mexican cheese, and a light dressing instead of salsa. Also you can add shredded carrots in lieu of the jalapenos.

    One salad I experimented with, I used tomato wedges that I placed in a big fan like circle, then added the greens on top, then threw in a few slices of mozzarella, I sliced them from a block, making little 1" x 1" thin squares of it. On top of that and the greens I put some golden raisins, and just used a little lemon juice and vinaigrette for added flavor.

    If you like sweetness, take any of the salads (well except the spicy one) and add berries. Fresh blueberries are probably the best for salads. Mandarin slices are also very popular, use the ones out of a jar that have no skin on them, that way the salad texture isn’t ruined by tough or chewy slices.

    One of my favorites is the Santa Fe Chicken Salad. It tastes great and really isn’t that bad for you. The recipe is a video so its quite simple to follow along.
