I’m looking for great, budget wise recipes that are still HEALTHY! I’m making a cookbook for some of my friends who are students and am looking for healthy recipes!

Also, please no pork or fish.

    potatoes salad:
    Boil eggs and Potatoes
    cut potatoes into squares and the boil eggs,add chopped celery and yellow cheese, mix with mayo and or sour cream I also add some ranch for flavor and salt and pepper
    Tuna is always good and cheap
    also chicken tacos: Just Boil the chicken and shred it, add to corn tortillas and roll up and fry
    also Maybe some Beff tacos Or spagetti

    Egg Fried Rice Recipe
    Ingredients
    3 cups cooked rice
    4 eggs, beaten well
    1 onion, chopped finely
    1/2 cup boiled peas
    1/4 cup finely chopped french beans, boiled
    1/4 cup carrots, chopped and boiled
    1" ginger, grounded
    4 garlic flakes, grounded
    3 green chillies, chopped finely
    1/2 tsp turmeric powder
    1 tsp red chilli powder
    1/2 tsp garam masala
    2 tbsp oil
    salt as per taste
    chopped coriander leaves for
    garnishing
    1 tsp soy sauce (optional)

    Method
    Heat oil in a pan. Fry onion till golden brown.
    Add ginger-garlic paste and green chillies, simmer for a minute.
    Add turmeric powder, red chilli powder and simmer for 2 minute.
    Add the beaten eggs and stir continuously till well set (for about 5 min).
    Add chopped and boiled vegetables and stir for 2 minutes.
    Add Salt and garam masala. Add cooked rice and mix it well.
    If soy sauce needed add it and stir once again. Cover the pan and let it cook for 5 minutes
    Garnish with coriander leaves. Serve hot.

    You could skip the things you don’t have, or like, or just to make it easier.

    not really healthy but pretty cheap

    Monte Crisco’s

    French bread
    deli ham
    deli turkey
    Swiss cheese
    American cheese
    pancake mix
    dash of cinnamon
    powdered sugar
    cherry pie filling

    cut french bread on diagonal. make pancake mix and add cinnamon. dip bread in pancake mix covering fully, place in hot oiled pan. place ham turkey and cheeses on bread and put on top piece of bread. Cook on all sides until golden brown. put on plate and cut in half dust with powdered sugar and serve with pie filling to dip sandwich in.

    you won’t need to make and thing else as this is very filling but if you happen to be big eaters serve with fries or onion rings.

    you can make about 4 sandwiches per loaf of bread and some french breads come in loaves of 2.

    english muffin pizza’s
    use english muffins for the crust and top with favorite pizza toppings.

    you can always go with fruit and cottage cheese or yogurt and granola
