    Healthy Spaghetti:

    It’s a surprisingly tasty recipe made with simple, fresh ingredients.

    6 tablespoons olive oil
    1 onion, chopped
    3 tablespoons fresh sweet basil, chopped
    8 roma tomatoes, peeled and chopped (only use roma tomatoes)
    1 1/2 cups cooked chicken, from any market
    3/4 lb spaghetti
    salt
    pepper
    parmesan cheese

    1. Bring water to a boil in a large pot.
    2. Boil tomatoes in water for about 1 minute.
    3. Scoop the tomatoes out.
    4. Drain it with cold water to let it cool.
    5. Take a knife and slice an"X" on the bottom of each tomato.
    6. Then peel the skin from all the tomatoes and discard.
    7. Chop the tomatoes.
    8. Chop the onion and fresh sweet basil.
    9. Shred the cooked store-bought rotisserie chicken.
    10. In a nonstick pot, heat the olive oil.
    11. Saute the chopped onions for 5 minutes.
    12. Add the chopped tomatoes, stirring them with the onions.
    13. Season with salt and pepper.
    14. Cover the pot and let simmer for 30-40 minutes, returning occasionally to stir and season.
    15. Meanwhile, cook the spaghetti according to package instructions.
    16. After 30 minutes add the shredded chicken and basil to the pot.
    17. Just add enough shredded chicken to your liking and refrigerate the rest for some other recipe.
    18. When chicken is heated through, turn stove off and place spaghetti into pot and toss thoroughly.
    19. Serve with parmesan cheese if you like.
    20. Serves 2 people.
    21. Double or triple the recipe for larger groups.
    22. This can be easily turned into a fabulous vegetarian meal simply by not adding the chicken.

    Healthy GRILLED CHICKEN TERIYAKI

    4 skinless, boneless chicken breast halves
    1 cup teriyaki sauce
    1/4 cup lemon juice
    2 teaspoons minced fresh garlic
    2 teaspoons sesame oil
    Place chicken, teriyaki sauce, lemon juice, garlic, and sesame oil in a large resealable plastic bag. Seal bag, and shake to coat. Place in refrigerator for 24 hours, turning every so often.
    Preheat grill for high heat.
    Lightly oil the grill grate. Remove chicken from bag, discarding any remaining marinade. Grill for 6 to 8 minutes each side, or until juices run clear when chicken is pierced with a fork.

    A cup of vanilla yogurt, one banana, and 3 oz. orange juice. You can mix this up with different fruit. And also by layering it with granola.

    A pasta salad is a great dish for something that u could make easily, quick and delicious too. You could add your favorite vegetables and meat to suit ur palate and also give that personal touch. I am sure u would find it really easy. I like the pasta salad recipes here and am sure u would like them too http://www.ifood.tv/network/pasta_salad/recipes
