    Beef and Potato Stroganoff
    From Every Day with Rachael Ray
    October – 2006

    FOUR SERVINGS
    Prep Time: 15 min
    Cook Time: 20 min
    4 large russet potatoes (about 3 pounds)
    2 tablespoons unsalted butter
    1 pound assorted sliced mushrooms
    1 tablespoon onion powder
    2 teaspoons garlic powder
    1/2 cup heavy cream
    1 pound lean ground beef, crumbled
    Salt and freshly ground pepper
    1/2 cup sour cream, at room temperature
    Snipped chives, for garnish

    1. Pierce the potatoes all over with a fork and microwave on high until cooked through, about 9 minutes.
    2. In a large skillet, heat the butter over medium-high heat, add the mushrooms and cook until golden, about 10 minutes. Stir in the onion powder, garlic powder and 3/4 cup water and boil to reduce the liquid by half, about 2 minutes; stir in the heavy cream and remove from the heat.
    3. In a medium saucepan, brown the ground beef over high heat, about 5 minutes. Remove with a slotted spoon and add to the mushroom mixture; season to taste with salt and pepper.
    4. Slice one-third off the top of each potato and chop the tops. Using a spoon, hollow out each potato, leaving a thick wall. In a microwavable bowl, mash together the chopped potato, potato centers and sour cream. Season with salt and pepper and reheat in the microwave.
    5. Return the beef and mushroom mixture to a simmer. Stuff the hollowed potatoes with the beef mixture and top with chives. Serve with the mashed potatoes.

    Use ground turkey or chicken instead.

    1 lb. ground turkey
    2 cups water
    1 pkg. Macaroni & Cheese
    1 tsp. chili powder
    3 cups chopped broccoli
    1/4 cup tomato sauce

    BROWN meat in large skillet; drain.
    STIR in water, Macaroni and chili powder. Bring to boil; cover. Reduce heat to low; simmer 5 min., stirring twice.
    ADD broccoli; simmer 5 min. or until macaroni is tender. Stir in Cheese Sauce Mix and tomato sauce until blended.

    You can try a lot of things!! I hope these help:

    Dirty Rice

    1lb ground beef or chicken, turkey
    2C. White or brown rice
    1 med. onion diced
    1 green pepper diced
    2 Tbs. minced garlic

    Brown the meat with vegetables and garlic. Add rice and the correct amount of water for the rice. Cover and cook according to the rice directions. Delicious!

    "Beefy Noodle"

    1lb Ground meat (beef chicken or turkey) or stew meat
    1Tbs. garlic powder
    salt and pepper
    1 Pkg. Egg Noodles
    1 Envelope Brown gravy mix
    water

    Brown the meat, add garlic. Combine the gravy mix and water and add to the meat. Boil your egg noodles in seperate pot. Serve with the meat over the noodles.

    how about scrapping the hearty food and buy some green leaf lettuce, bacon, a nice favorite cheese, cherry tomatos, cucumbers and carrots and make a blt salad.

    I know you said alternative to hamburger helper, but if you have to fix hamburger helper …use cubed steak cut in peices instead of ground meat. Taste like home made and no one knows it’s not.

    My kids like ground turkey or a cut up chicken breast with rice and cream of chicken soup. Then stir in a vegetable of your choice for a quick casserole. You cold also use tomato soup and a favorite kind of cheese for a twist.
