I’m on maternity leave and my husband has been bugging me to have dinner ready when he gets home from work. A few problems: I don’t like cooking, I’m not good at it, and don’t usually do it at all. When I do cook, I usually just add salt and pepper on top of some chicken, and bake it in the oven. Or I make spaghetti. I feel like being thoughtful today and want to make him something, so I need advice on what I can make with these ingredients. Please give me instructions on how I would make it!
In our pantry/freezer, we have:
-boneless skinless chicken breasts
-light ground turkey
-broccoli
-cheese sticks
-spaghetti sauce
-corn flakes
-wild rice
-brown rice
-corn
-ro-tel canned diced tomatoes and green chilies
PLEASE HELP! I want to make him something different than just baked chicken and a side.

season up the spaghetti sauce with some oregano garlic and onions. Cook the wild rice as directed on the package..If you want to fry the chicken breasts you can pound them out and coat them with an egg wash and the crushed corn flakes. I was going to say shred the cheese and melt on top of the chicken after you cook it put the sauce over the top of it. You should be heating the sauce through while cooking the chicken and rice is on the back of the stove because it will take about an hour to cook. Wild rice is yummy don’t worry about it. You can steam the broccoli and put the cheese on it. You can add the diced tomatoes to the sauce at the beginning of heating. If you have bisquick or flour and salt and sugar you can make biscuits to go with it. You can use bisquick even if you don’t have milk good luck.

this is very easy to make just cut the recipe in half cook up the chicken-( i boil mine) chop it and add to the pan when you stir in the cheese
EASY FETTUCCINE ALFREDO
1 lb. fettuccine noodles
ALFREDO SAUCE:
1/2 c. butter
1 c. heavy cream OR MILK
1 1/4 c. grated Parmesan cheese
1/4 tsp. salt
Dash pepper
In large pot, bring 4 quarts water with 1 tablespoon salt to boiling. Add noodles; return to boiling. Boil, uncovered and stirring occasionally, until tender but firm. Drain noodles; keep warm.
To make Alfredo Sauce: Heat butter and cream in medium saucepan until butter is melted. Remove from heat. Add 1 cup Parmesan cheese, salt and pepper. Stir until sauce is blended and fairly smooth.
Add to drained noodles and toss until they are well coated. Sprinkle with remaining Parmesan cheese

Chicken Pilaf: Yield: Serves 6
Ingredients:
2 cups cooked chicken, cut in cubes
8 tablespoons butter
1/2 cup chopped pecans (optional)
1/4 cup finely chopped onion (optional)
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground coriander (optional)
1 1/2 cups uncooked long grain rice
3 cups boiling chicken broth
1 can (14.5 ounces) diced tomatoes
Preparation:
Melt butter in a medium saucepan over medium-low heat. Add chicken and onions and cook for 3 minutes. Add the pecans and cook for 2 minutes longer. Add salt, pepper, and coriander. Add rice and cook, stirring, for 5 minutes. Add the boiling broth and add the tomatoes. Bring to a boil. Cover, reduce heat to low, and simmer for 20 minutes, or until rice is tender and liquid has been absorbed. Remove from heat and let stand for 5 minutes.
Another recipe you could do is make chicken and rice soup if you have a Crockpot. Just cut up your chicken and brown it in a skillet. Cook your rice about halfway on the stove, and then put it all in the slow cooker. Add broccoli, corn, peas, green beans, etc., cream of mushroom or chicken if you have it, butter, salt and pepper, and whatever else to season. Just let it cook for a couple hours.

1 cup brown rice
1-1/2 cups water
chicken breasts, sliced into bite-sized strips
Ro-tel diced tomatoes and chilies
chopped garlic
salt
pepper
In a large skillet, heat up some olive oil (any oil will work; I just like olive oil). Add rice and garlic, saute for a few minutes. Add chicken strips, continue sauteing until chicken is slightly cooked. Add water, tomatoes and chilies, salt and pepper. Bring to a slow boil, stirring frequently. Reduce heat and cover. Simmer for about 20 minutes, until rice is cooked. Serve with love…

Serve it with wild rice and broccoli.

Stephanie, if my wife was on maternity leave, and I bugged her to have supper ready, I wouldn’t be eating it I would be wearing it. By the way, we are both past those days of al that maternity stuff. If it was my wife, she would serve me up cornflakes and tell me to shut up.
You have the Spaghetti Sauce, you have the light ground turkey, just brown or saute the turkey then add the sauce (because it’s already a prepared sauce), and add it to to Spaghetti, Rigatoni or Penne what ever you have. It’s quick and simple, and you won’t be on your feet for to long.

Use the turkey and brown rice to make cajun dirty rice. There are many recipes online, and if you had an onion, garlic powder, celery and green pepper, it would be better, but you don’t say what’s in your fridge. They, simmer the diced tomato and corn for a nice spicy side dish.
