I do have some strawberries, grapes, blueberries, tomatoes, and lettuce..just to name some on-hand ingredients. I would like to make a healthy side salad to go with some grilled chicken. Does anyone have any relatively simple salad and salad dressing recipes? I prefer a dressing recipe without oil (if that is possible). Thank you.

    oil-free dressings
    easy.

    1 part balsamic vinegar
    3 parts apple juice
    shallots and chopped fresh herbs
    Salt and pepper to taste.
    -or-
    1 part Fat free buttermilk
    3 parts Fat free sour cream
    garlic and onion powder
    dried oregano
    fresh thyme and parsley
    Salt and pepper to taste.
    -or-
    1 peeled and seeded cucumber, then pureed
    2 cups Fat free plain yogurt
    2oz lemon juice
    chopped fresh herbs
    Salt and pepper to taste.

    for simpler ideas…
    try fresh salsa, chilled marinara,
    sweet chili sauce, sweet n sour sauce,
    and Asian Plum Sauce.
    or instead of dairy products
    substitute fat-free mayonnaise (but i dont like the taste).

    It is but it wont be the same. However a good one I like is 2 tbsp of lemon juice (fresh is best), 1/2 tsp dill, 1 of salt, 1 of pepper, and 1/2 of garlic.

    I suggest you should try this Spinach Salad Dressing.

    3
    tablespoons fresh lemon juice
    1
    tablespoon tarragon vinegar
    1
    tablespoon mayonnaise
    teaspoon salt
    teaspoon dry mustard
    teaspoon freshly-ground black pepper
    teaspoon sugar
    1
    small garlic clove chopped
    1
    cup olive oil
    Preparation

    Step 1
    In a food processor blend all ingredients except oil until smooth and with motor running add oil in a stream, blending until emulsified. Transfer dressing to a jar and keep chilled, covered, until serving.
    Step 2
    This recipe yields 1 1/4 cups.
    Step 3
    Yield: 1 1/4 cups
