Its a very yummy recipe but I feel guilty eating it!!!
We cut vegetable..fry them then put them in a tray..pour bashamel suace..put some veges again..more sauce ..etc..

Is there any way I can change it so that I don’t fry the vegetable?

    You can steam the vegetables instead of frying them but I would be more concerned with the fat content in the bechamel sauce then the oil you use. Changing oils from a canola or animal based oil to olive oil does not lower the calorie count at all it only provides some nutrients for health.
    Why not use a nice light tomato sauce with a little bechamel over the top?

    you could roast them mix them up with a little bit of olive oil and season them; then put the in the oven

    Try baking your veggies in the oven or steaming. You could even boil them in a little water instead of frying.

    You can try healthier options when making your bechamel sauce i.e. use olive oil instead of butter, use low fat milk instead of full cream, use wholewheat flour instead of All purpose or cake flour
